Easter egg men / Omini di Pasqua con le uova

I remember seeing these cute men a few years ago on a BBC food program and immediately made them. The eggs were not red, however I thought to make them funkier by dyeing the eggs red, to tie in the Christian tradition and symbolise Christ’s blood, I am not a practicing catholic, but it is my heritage nonetheless. The bread remains soft and the raw egg cooks in the oven while the bread bakes. Magic!

Ricordo di aver visto questi omini carini anni fa in un programma della BBC e li preparai immediatamente. Le uova non erano colorate di rosso, ma ho pensato di rendere la ricetta più stravagante tingendo le uova di rosso, legandole alla tradizione cristiana e simboleggiando il sangue di Cristo, non sono cattolica praticante, ma fa comunque parte della mia cultura. Il pane rimane soffice e le uova cuociono in forno durante la cottura del pane. Magia!

The first step is to dye the eggs, it does take a while, but while that happens, you can make the bread dough. the recipe makes two men, but you simply need to double the quantities if you want to make more. To be proportioned to the egg, you will need to make them about 15 cm tall, they will grow slightly in the oven, mine gets to 18-20 cm after baking. Obviously, if you prefer, you can leave the eggs as they are and skip the dyeing, but I love them in red!

Il primo passaggio è tingere le uova, il che richiede un po’ di tempo, ma nel frattempo potete preparare l’impasto del pane. La ricetta è per due omini, ma basta raddoppiare le dosi se ne volete fare di più. Per essere proporzionati alle uova, ciascuno dovrà essere circa 15 cm di altezza, cresceranno lievemente in forno, i miei sono circa 18-20 cm dopo la cottura. Chiaramente, se preferite, potete lasciare le uova al naturale, ma le adoro in rosso!

Egg dyeing / Tintura per le uova:

2 raw eggs at room temperature / uova a temperatura ambiente

2 tbs red food colouring / cucchiai di colorante alimentare rosso

1 tbs white wine vinegar / cucchiaio di aceto bianco

enough hot water (not boiling temperature) to cover the eggs / sufficiente acqua calda (non ad ebollizione) per coprire le uova

Wash the eggs and dry them well. In a bowl, mix the hot water with the vinegar and the colouring and mix well. Add the eggs and ensure that they are fully covered. Leave to infuse for at least 30 minutes.

Lavate le uova e asciugatele bene. In una ciotola, mescolate l’acqua calda con l’aceto e il colorante. Aggiungete le uova, assicurandovi che siano ben coperte dal liquido. Lasciate in infusione per almeno 30 minuti.

Bread dough / Impasto per il pane:

200 gr strong white bread flour / farina bianca di forza

125 ml water / acqua

1 tbs olive oil / cucchiaio di olio d’oliva

1 pinch of salt / pizzico di sale

1 pinch of sugar / pizzico di zucchero

5 gr fast action dried yeast / lievito essiccato istantaneo

2 dyed eggs (1 for each men), dried and at room temperature / 2 uova colorate (1 per omino), asciutte ed a temperatura ambiente

Mix the flour with the sugar and the salt, add the yeast and pour in the water and the oil. I use a stand mixer, but you can do it by hand. Mix until the dough is smooth and elastic and leave to prove, covered, until doubled in size.

Mescolate farina allo zucchero e sale. Aggiungete il lievito e versate acqua e olio. Io uso una planetaria, ma potete anche impastare a mano. Impastate fino a che la pasta è liscia ed elastica e lasciate lievitare, coperta, fino al raddoppio.

Divide the dough in two and create two oval shaped bread. I use a pair of scissors and cut the bottom short side (to create the legs), then make a first cut at an angle (towards the bottom) on the two sides and a second (towards the top) to create the arms and the head. The head will be a funny shape now, so manipulate it to make it rounder and make incisions for the eyes, the nose and the smile. Flatten the middle/belly and position the egg. Stretch the arms to embrace the egg, then shape the legs. Your man is ready!

Dividete l’impasto in due e formate due panetti ovali. Con un paio di forbici, praticate un taglio nella curva corta in basso dell’ovale, a create le gambe. Tagliate ad un angolo verso il basso i due lati lunghi e poi tagliate di nuovo ad un angolo verso l’alto. Questi tagli creeranno le braccia e la testa. La testa avrà una forma strana, dunque manipolatela per renderla tondeggiante e fate i buchi per occhi e naso e incidete il sorriso. Schiacciate il centro dell’omino e posizionate l’uovo. Tirate le braccia per estenderle e creare un abbraccio sull’uovo. Sistemate le gambe e il vostro omino è pronto!

Place the little men on a baking tray and put them in the cold oven. Turn the oven on to reach 200 degrees Celsius and bake until nicely golden. The eggs will cook while the men bake.

Mettete gli omini su una placca da forno. A forno spento, piazzate la teglia e accendete a 200 gradi. Cuocete fino a doratura.

They are perfect for your Easter lunch or to give to friends and family as a little, tasty, present!

These are the perfect treat for a celebratory aperitivo or to share with friends. Two days ago my partner and I celebrated our ten years together enjoying these with a nice Martini before a tasty home made dinner. We originally met at primary school, but I moved to a different school and never met each other again since 2011: life is weird eh?

Questi biscottini sono perfetti per un aperitivo celebrativo o da gustare con gli amici. Due giorni fa il mio compagno ed io abbiamo festeggiato 10 anni insieme sgranocchiando queste prelibatezze e sorseggiando un Martini, prima di goderci una cenetta fatta in casa. Ci siamo conosciuti alle elementari, ma dopo che ho cambiato scuola non ci siamo più visti, fino al 2011: strana la vita!

How many biscuits you will obtain from this dough will depend on the size of your cutter, but I think they are prettier when cut small.

La quantità di biscotti che otterrete dall’impasto dipende dalla misura del tagliabiscotti che decidete di usare, ma a me sembrano più carini se tagliati piccoli.

Ingredients / Ingredienti:

200 gr white flour (you could even use white spelt, or gluten free flour such as rice flour) / farina bianca (potete anche usare farina di farro bianca o gluten free tipo farina di riso)

120 gr salted butter, cold / burro salato, freddo (se non trovate il burro salato, aggiungete un cucchiaino di sale extra)

80 gr grated Parmesan / Parmigiano grattugiato

a generous pinch of salt / un pizzico generoso di sale

Black pepper to taste / Pepe Nero a piacere

Add all the ingredients in a bowl and either mix by hand or use the stand mixer to obtain a breadcrumb like consistency. Add cold water by the tablespoon, little at a time, until the dough comes together and is smooth. It shouldn’t be sticky, but nicely combined and firm.

Aggiungete tutti gli ingredienti in una ciotola e impastate a mano o in una planetaria fino a che otterrete una consistenza simile al pangrattato. Aggiungete acqua fredda a cucchiaiate, una alla volta, fino a che l’impasto si compatta. L’impasto non deve essere appiccicoso, ma liscio e sodo.

Wrap in clingfilm and let rest in the fridge for 1 hour.

Avvolgete nella pellicola e lasciate riposare in frigo per un’ora.

Take it out of the fridge, leave at room temperature for 5-10 minutes (meanwhile, turn the oven on at 180 degrees Celsius), then roll on a floured surface to about 1/2 cm thickness and cut into shapes.

Tirate fuori dal frigo e lasciate a temperatura ambiente per 5-10 minuti, nel frattempo accendete il forno a 180 gradi. Stendete col matterello su una superficie infarinata ad uno spessore di circa 1/2 cm e tagliate i biscottini.

Place the biscuits on a tray and bake for 10-12 minutes or until they are golden. Leave to cool before enjoying with a nice drink!

Mettete i biscottini su una teglia e cuocete per 10-12 minuti o fino a doratura. Fate raffreddare e gustateli con un bel aperitivo.

Rustic asparagus and salmon tart – Torta rustica di asparagi e salmone

Sometimes I improvise in the kitchen, especially if I am inspired by some recipe I see. This happened today, when I remembered an asparagus tart recipe I saw prepared on Saturday Kitchen Live last week. The tart had a rustic feel to the pastry and I wanted to recreate it, making it even more rustic. The filling needed some goat curd cheese, which I didn’t have, so I thought of using some feta instead, with the added benefit of not needing to add any salt! I also added some tinned salmon, which can be easily swapped with fresh or smoked one.

Spesso in cucina mi piace improvvisare, specialmente se mi ispiro a ricette che ho visto in giro. La ricetta di oggi è frutto di un’ispirazione da Saturday Kitchen Live di sabato scorso, dove hanno preparato questa torta salata con gli asparagi. La torta aveva un che di rustico nella pasta e ho voluto accentuarlo ancora di più. Il ripieno richiedeva formaggio fresco di capra che non avevo, dunque l’ho sostituito con della feta, con il beneficio di non dover aggiungere sale al tutto! Ho anche aggiunto un po’ di salmone in scatola, che può essere facilmente sostituito con fresco o affumicato.

Using the best ingredients is always a plus and I had some delicious fresh cream from a farm nearby: Barnowl Jerseys. We also buy their raw milk, which I boil and keep refrigerated for up to a week and I absolutely love it!

Ingredients for 4 portions / Ingredienti per 4 porzioni:

For the pastry / Per la pasta:

180 gr plain flour / farina bianca

70 gr light rye flour / farina di segale

10 gr buckwheat flour / farina di grano saraceno

100 gr cold butter, cut into small cubes / burro freddo, tagliato a cubetti

1 egg / uovo

1/2 usb salt / cucchiaino di sale

1 to 3 tbs cold water / cucchiai di acqua fredda

For the filling / Per il ripieno:

1 tin of salmon in oil / scatola di salmone sott’olio

9-10 asparagus / asparagi

250 ml single cream / panna liquida

3 eggs / uova

200 gr feta cheese / feta

some pepper to taste / pepe a piacere

Turn the oven on at 180 degrees Celsius. Accendete il forno a 180 gradi.

Put all the ingredients but the water in a stand mixer or a food processor and start mixing. Add the tablespoons of water one at time, until the dough comes together: you may not need all the water.

Mettete tutti gli ingredienti in un robot da cucina o nella ciotola della planetaria e cominciate ad impastare. Aggiungete un cucchiaino di acqua alla volta fino a che l’impasto si agglomera: potrebbe non occorrere tutta l’acqua.

Blanch the asparagus for 5 minutes. Do not throw away the woody stalks, peel them and blanch them as well.

Sbollentate gli asparagi per 5 minuti. Non buttate i gambi legnosi, pelateli e sbollentateli con le punte.

Lightly flour your working surface and roll the dough to about 10 mm thickness. Place it in your oven tin of choice (I’ve used a rectangular shaped Pyrex dish), cover with greaseproof paper and fill with ceramic baking beans (or dried beans) to blind bake for about 10 minutes.

Infarinate leggermente il piano di lavoro e stendete l’impasto ad uno spessore di circa 10 mm. Foderate il vostro stampo a scelta (io ho usato un Pyrex rettangolare), coprite di carta da forno e riempite con perle di ceramica o fagioli secchi per una prima cottura di 10 minuti.

While the base bakes, prepare the filling. Beat the eggs in a bowl, add the cream, the shredded salmon, the cubed feta and grind some pepper. Pour in the pastry case and finish with the asparagus on the top.

Mentre la base si cuoce, preparate il ripieno. Sbattete le uova in una ciotola, aggiungete la panna, il salmone a pezzetti, la feta a cubetti e una macinata di pepe. Versate nella base e completate con gli asparagi in cima.

Bake for about 25-30 minutes or until the filling is firm.

Cuocete per 25-30 minuti o fino a che il ripieno è sodo.

Today, 25th of April, is liberation day in Italy, liberation from nazi-fascism, the end of WWII, 75 years ago. To celebrate it on the blog and at home, today I’ve prepared panzerotti, which are fried calzoni, native of Puglia. They were my grandmother’s speciality and when I think of her, I think of Nonno Carlo, who was anti-fascist, was tortured by the Nazis and escaped only thanks to my great-grandmother, who spoke fluent German and went to rescue him from jail (in Via Piangipane in Ferrara) and it makes me think of my great-grandfather Giacinto, who lost his job due to his integrity and beliefs, as he didn’t want to join the fascist party. Today I thank them for being positive examples to me and I thank those who gave their life to make us free.

Oggi è il 25 Aprile, festa di Liberazione in Italia, liberazione dal nazi-fascismo, fine della seconda Guerra Mondiale, 75 anni fa. Per celebrare a casa e sul blog, oggi ho preparato i panzerotti, nativi della Puglia. Erano la specialità di mia nonna Giulia e quanto penso a lei, penso al Nonno Carlo, antifascista, torturato dai nazisti e salvatosi grazie alla bisnonna Maria, che parlava tedesco e andò a recuperarlo alle carceri in Via Piangipane a Ferrara e mi fa pensare al bisnonno Giacinto, che perse il lavoro per via della sua integrità e credo, perché non volle iscriversi al partito fascista. Oggi li ringrazio per avermi dato il buon esempio e ringrazio chi ha dato la propria vita per renderci liberi.

Back to the recipe, it’s fairly easy, basically a pizza dough, however it gets a bit more complicated in terms of fillings. My grandmother Giulia was from Lucera, which is in the Foggia province. There, the main filling of panzerotti is ricotta cheese with only a little mozzarella: I grew up with it, so I prefer it, but you can use only mozzarella instead, as it’s done in the rest of the Puglia region. My favourite fillings are ricotta, mozzarella and spinach, or ricotta, mozzarella and ham or a simple ricotta, mozzarella and tomato sauce.

Tornando alla ricetta, è abbastanza facile, praticamente impasto della pizza, però diventa complicato in termini di ripieno. Mia nonna Giulia era di Lucera in provincia di Foggia. Lì, il ripieno per i panzerotti è soprattutto ricotta, con poca mozzarella: sono cresciuta mangiandoli così, dunque è la mia preferenza, ma sono buoni anche con la mozzarella soltanto, come è in uso nel resto della regione. I miei ripieni preferiti sono ricotta, mozzarella e spinaci o ricotta, mozzarella e prosciutto cotto, oppure semplici con ricotta, mozzarella e salsa di pomodoro.

I use a round cutter of 10cm diameter and I think it’s the perfect size, I would go larger, as it makes them difficult to fry properly. And yes, Panzerotti are fried, otherwise they are calzoni and it’s a different story!

Io uso un tagliapasta da 10cm di diametro e lo trovo perfetto, sconsiglio di farli più grandi perché diventano scomodi da friggere. E i panzerotti sono fritti, altrimenti si chiamano calzoni e si parla di altro!

Ingredients for 8 panzerotti / Ingredienti per 8 panzerotti:

250gr strong white flour / farina bianca di forza

5 gr dried yeast / lievito secco

1 tsp salt / cucchiaino di sale

1 tbs oil / cucchiaio di olio

100 ml lukewarm water / acqua tiepida

For the filing / per il ripieno:

250gr ricotta, well drained / ricotta, sgocciolata bene

30 gr grated Parmesan / Parmigiano grattugiato

50 gr grated mozzarella / mozzarella grattugiata

a choice of cooked spinach or cubed ham or tomato sauce / a scelta spinaci lessati o prosciutto cotto a cubetti o salsa di pomodoro.

To fry / Per friggere:

500ml sunflower oil / olio di semi di girasole

Mix the flour, oil, yeast and salt, then add the water little by little to form an elastic, non sticky dough. You may not need all the water. Leave to prove until doubled in size.

Mescolate farina, olio, lievito e sale, aggiungete poi l’acqua poco a poco per formare un impasto elastico e non appiccicoso. Potreste non usare tutta l’acqua. Lasciate a lievitare fino al raddoppio.

Get your filling ready: mix the ricotta with the Parmesan and the mozzarella, then add your ingredient of choice, so either mix in the spinach, or the ham or the tomato sauce. But you can get creative and make your own filling as you like it.

Preparate il ripieno: mescolate la ricotta col Parmigiano e la mozzarella, aggiungendo poi il vostro ingrediente a scelta, spinaci o prosciutto cotto o salsa di pomodoro. Potete anche creare il vostro ripieno preferito.

Flour the working surface and roll the dough to about 1 cm thickness, then cut the round shapes.

Infarinate il piano di lavoro e stendete l’impasto a circa 1 cm di spessore, per poi tagliare i cerchi.

Put about 1 tablespoon of filling in the centre, fold in half and seal the edge pressing very well.

Mettete circa un cucchiaio di ripieno al centro, piegate a metà e sigillate bene i bordi premendo bene.

Make sure that the oil is very hot, then fry each panzerotto until golden and crispy. I would recommend to fry maximum two at the same time, to ensure that the oil stays really hot.

Assicuratevi che l’olio sia ben caldo e friggete i panzerotti fino a che sono croccanti e dorati. Non cuocetene più di due alla volta, così che l’olio resti ben caldo.

My Grandmother used to make them thicker and fry them soon long they were almost unhealthy, my version is slightly less greasy, but if you eat them with your hands, they are even more delicious!

Mia nonna lasciava l’impasto più spesso e li friggeva così tanto che erano da infarto, la mia versione è leggermente più sana, ma se li mangiate con le mani, sono ancora più buoni!

Sometimes you just want to prepare something quick, easy and tasty and I think that these cheat meatballs just fit the bill to perfection.

Ogni tanto hai solo voglia di preparare qualcosa di veloce, facile e saporito e secondo me queste polpette truffaldine sono perfette.

I’ve been making them for ages, since I went to live on my own in my flat on the outskirt of Ferrara, back in 2009.

Le preparo da quando sono andata a vivere da sola nel mio appartamento nella periferia di Ferrara, nel 2009.

Back them, I was commuting by train every day and sometimes on my return from work I was just too tired to arrange for a laborious dinner.

Al tempo, facevo la pendolare via treno per lavoro e a volte al mio ritorno ero così stanca che cucinare una cena vera e propria era fuori questione.

You can knock these out in minutes and they go well with a salad, or some grilled vegetables and a cheeky sauce.

Si preparano in minuti e si accompagnano bene con un’insalata, verdure grigliate e una salina sfiziosa.

You can either fry them in oil, or make them slightly healthier by baking them in the oven.

Le potete friggere oppure renderle un po’ più sane cuocendole in forno.

Ingredients for two serving / Ingredienti per due porzioni:

1 large tin of tuna (about 150gr) / scatoletta di tonno grande (circa 150gr)

250 gr ricotta, well drained / ricotta,, scolata bene

60 gr grated Parmesan / Parmigiano grattugiato

2-3 tbs breadcrumbs / cucchiai di pangrattato

Mix everything together to a thick paste (add more breadcrumbs if necessary) and roll into small balls.

Mescolate tutti gli ingredienti ad ottenere una pasta densa (aggiungete pangrattato se necessario) e rotolatele in piccole palline.

Fry in hot oil until crunchy and golden on the outside or bake in a hot oven (180-200 degrees Celsius) until golden.

Friggete in olio caldo fino a che sono croccanti e dorate o cuocete in forno caldo (180-200 gradi) fino a doratura.

Taralli pugliesi

Although my grandmother came from Puglia, she never made taralli at home, as far as I can remember. But these are a favourite everywhere in Italy, despite being very regional, so I wanted to try and make them at home. They are great with an aperitivo or as a snack and surprisingly easy to make: no proving, just the faff of boiling them before baking, but not that much of an inconvenience.

Sebbene mia nonna fosse pugliese, non ha mai preparato i taralli in casa, che io ricordi. Tuttavia sono amatissimi in tutta Italia, pur essendo una specialità regionale, dunque ho voluto provare a farli a casa. Sono fantastici all’aperitivo o come merenda e sono incredibilmente facili da fare: niente lievitazione, solo la ‘scocciatura’ di lessarli prima di metterli in forno, ma non è così terribile.

You can make them plain, or divide the dough in 3 or 4 parts and add different flavourings to each, which is what I did, adding a couple of spoonfuls of sesame seeds to one part, the same of fennel seeds to another and 4 crushed dried chillies to the other, leaving the fourth one plain.

Potete farli classici, o dividere l’impasto in quattro parti e insaporire ciascuna in modo diverso, che è quello che ho fatto io, aggiungendo un paio di cucchiai di semi di sesamo in una porzione, la stessa quantità di semi di finocchio ad un’altra e 4 peperoncini secchi tritati ad un’altra, lasciando la quarta semplice.

Give them a try, you won’t regret it!

500 gr white bread flour / farina bianca per pane

100 ml water / acqua

125 ml dry white wine / vino bianco secco

150 ml olive oil / olio d’oliva

1 tsp salt / cucchiaino di sale

I mixed all the ingredients in a stand mixer to obtain a smooth and greasy dough, you can do this by hand if you prefer. Then divide the dough in four parts and add the flavourings to each, kneading by hand to incorporate them.

Ho mescolato tutti gli ingredienti nella planetaria ad ottenere un’impasto omogeneo e unto, se preferite potete impastare a mano. Dividete poi l’impasto in quattro parti e aggiungete le spezie che preferite in ciascuna parte.

Roll the dough into thin strips (about 1 cm thickness) and cut many pieces of about 5-6 cm, then make a drop shape by sticking the two ends together and press firmly. Continue until you finish the dough.

Formate dei cordoncini con l’impasto (spessore circa 1 cm), rotolandolo sul piano di lavoro e tagliate tanti pezzetti di una lunghezza di 5-6 cm, unite le due estremità a formare una specie di goccia e premete bene per sigillare. Continuate fino ad esaurimento dell’impasto.

Bring a large pan of salted water to the boil, then drop a few taralli in the water and take them out when they come to the surface, leaving them to drain on a rack. Continue until all the taralli are boiled.

Portate ad ebollizione una pentola d’acqua salata e lessate i taralli un po’ alla volta, tirandoli fuori quando vengono a galla e lasciateli asciugare su una griglia. Continuate fino ad aver lessato tutti i taralli.

Turn the oven on at 170 degrees Celsius. Accendete il forno a 170 gradi.

Once the taralli are dry, transfer them on an baking tray, keeping them slightly apart from one another (they will expand while baking). Bake for 40-45 minutes or until golden (the baking time may vary depending on your oven).

Una volta che i taralli sono asciutti, trasferiteli su una teglia da forno, distanziandoli tra loro (si espanderanno in cottura). Cuocete per 40-45 minuti o fino a doratura (il tempo di cottura può variare a seconda del forno).

Pasta con cavolfiore e lardo croccante (Cauliflower and crispy lardo)

This pasta is one of the go-to dishes of my aunt Anna, who tells me that it comes from her grandmother, one of my paternal great-grand mothers, Maria. Bisnonna Maria was born in Tarvisio, a small town now in the Friuli Venezia-Giulia region of Italy, on the border with Austria and Slovenia, which was part of the Austro-Hungarian Empire when she was born.

Questa pasta è uno dei piatti forti di mia zia Anna, che mi dice venga dalla sua nonna, una delle mie bisnonne paterne, Maria. La bisnonna Maria era nata a Tarvisio, che oggi si trova in Friuli Venezia-Giulia, al confine con Austria e Slovenia, ma al tempo della sua nascita era parte dell’Impero Austro-Ungarico.

She met my great-grandfather Giacinto, who was from San Ferdinando di Puglia, while he was stationed in Tarvisio as revenue officer, they then moved to Ferrara due to bisnonno Giacinto’s job, who then changed career and became a railway worker, up until the fascists came to power and he refused to join the party and lost his job.

So, here’s another bit of my variegated family history and the reason why we cook this dish at home. The funny thing is that I’ve tried to find evidence that this is an actual dish coming from Austro-Hungarian culinary traditions, but I am unable to. I found recipes where there is lardo, but instead of cauliflower they are using cabbage, which indeed would be more in line with the produce of the area. I found, however plenty of evidence for cauliflower pasta in the area of Naples and its region, although not with lardo. Very confusing, a proper mystery!

Dunque ecco un altro tassello della variegata storia della mia famiglia e il motivo per cui cuciniamo questo piatto. La parte divertente è che ho provato a trovare indizi della provenienza di questo piatto dalla zona di origine della bisnonna Maria, ma non ci sono riuscita. Ho trovato ricette con lardo, ma invece del cavolfiore, viene usata la verza, che in effetti è un prodotto più in linea con la zona. Ho trovato tantissime ricette di pasta col cavolfiore dal napoletano e in generale dalla Campania, ma senza lardo. Davvero un mistero!

Regardless, this pasta dish is one of my favourites and it’s so creamy and delicious! In ogni caso, questa pasta è una delle mie preferite ed è cremosa e deliziosa!

Ingredients for 2 portions / Ingredienti per 2 porzioni:

150 gr of cauliflower / cavolfiore

60 gr lardo, thick skin discarded and cubed / lardo, senza la cotenna e tagliato a cubetti

60 gr grated Parmesan / Parmigiano Grattugiato

160 gr of short pasta such as tortiglioni or penne / pasta corta, tortiglioni o penne

1 tbs olive oil / cucchiaio di olio d’oliva

First of all, fry off the lardo in a hot pan with the olive oil, the fat will melt and you will be left with golden, crispy cracklings. Drain them and set aside, keeping the fat in the pan.

Per prima cosa, friggete il lardo in una padella calda con l’olio, il grasso si scioglierà e vi rimarranno i cubetti dorati croccanti. Scolateli e teneteli da parte, lasciando il grasso nella padella.

In a large pot, bring to the boil abundant salted water, divide the cauliflower into florets and leave them to cook for 5 minutes, then add the pasta and let them cook together until the pasta is ready (al dente, so check the cooking time on the packet).

In una pentola capiente, portate ad ebollizione abbondante acqua salata, dividete il cavolfiore nei fioretti e cuocete per circa 5 minuti. Aggiungete la pasta e fate cuocere insieme fino a cottura della pasta.

Drain the cauliflower and the pasta and toss them in the pan with the fat on a medium heat until the cauliflower becomes creamy, then add the Parmesan and continue to toss. Lastly, add the crunchy lard, then serve hot.

Scolate il cavolfiore e la pasta e saltateli nella padella col grasso fino a che il cavolfiore si sfalda e diventa cremoso, aggiungete il Parmigiano e continuate a saltare la pasta. Per ultimo, aggiungete il lardo croccante e servite caldo.

I would like to inform my readers that semolina is not just for puddings or baby food. In Italy is used in a variety of recipes, which although are not local to me, can be quite tasty and I do like to use semolina in my cooking.

Vorrei informare i miei lettori che il semolino non è solo per dessert o cibo da svezzamento. In Italia viene usato in tante ricette, che sebbene non tipiche della mia zona, sono saporite e a me piace usare il semolino in cucina.

One of the recipes I prepare fairly often is gnocchi alla romana. The definition of gnocchi can be quite confusing at times, although it is usually associated with the potato version, which has a defined shape and everybody knows, in reality gnocchi may mean different things: you can have ricotta gnocchi, which are mixed with spinach and plonked in water without shaping (gnudi), squash gnocchi which are prepared similarly to potato gnocchi, and several more!

Una delle ricette che preparo abbastanza spesso sono gli gnocchi alla romana. La definizione di gnocchi può causare confusione, perché sebbene venga associata più frequentemente agli gnocchi di patate, che hanno una forma definita e tutti conoscono, in realtà gnocchi può significare preparazioni diverse: ci sono gli gnocchi di ricotta, mescolata con spinaci e tuffati in acqua senza forma definita (gli nudi), gli gnocchi di zucca, che hanno una preparazione simile a quelli di patate, e tanti altri!

Gnocchi alla romana is possibly one of the simpler and cheaper options and they are fairly quick to make, although you need the semolina mix to cool down and dry out for a while before cooking them. They are typical of Rome and its region, although the controversy is about the use of butter (an ingredient better associated with the north Italy) and Parmigiano rather than Pecorino. Nevertheless, they are delicious!

Gli gnocchi alla romana sono una delle versioni più semplici ed economiche e sono abbastanza veloci da preparare, anche se dovete lasciare il semolino a raffreddare e seccare per un po’, prima di cucinarli. Sono tipici di Roma e del Lazio, anche se c’è un aspetto controverso nell’uso del burro (tipico del nord Italia) e del Parmigiano invece che Pecorino. In ogni caso, sono deliziosi.

Ingredients for 2-4 portions / Ingredienti per 2-4 porzioni:

125 gr semolina / semolino

500 ml full fat milk / latte intero

50 gr grated Parmesan / Parmigiano Reggiano grattugiato

1 egg yolk / tuorlo d’uovo

25 gr butter / burro

ground nutmeg, salt and pepper to taste / noce moscata, sale e pepe a piacere

For the gratin / Per gratinare:

20 gr melted butter / burro fuso

20 gr grated Parmesan / Parmigiano grattugiato

Bring the milk to the boil with salt, pepper and nutmeg. Add the semolina and whisk well to remove any lump. Continue until it thickens.

Portate il latte, con sale, pepe e noce moscata, a bollore. Aggiungete il semolino e mescolate energicamente con la frusta per togliere i grumi. Continuate fino a che il composto non si sarà addensato.

Off the heat, add the butter, the yolk and the Parmesan and mix all together. Then spread evenly on a tray where you have put a sheet of baking paper, to about 1 cm thickness.

Fuori dal fuoco, aggiungete il burro, il tuorlo e il Parmigiano e amalgamate il tutto. Stendete in modo uniforme su un vassoio foderato di carta da forno, ad 1 cm di spessore.

Leave to cool for at least 1 hour, so that it will become compact and easy to handle.

Lasciate raffreddare per almeno un’oretta, cosicché si compatti e diventi facile da maneggiare.

Turn the oven on at 180 degrees Celsius. Accendete il forno a 180 gradi.

With a round cutter, cut the gnocchi (just as they were biscuits) and place in an oven proof roaster (I use a Pyrex glass or Le Creuset ceramic roaster), overlapping each round slightly.

Con un tagliabiscotti rotondo, tagliate gli gnocchi (che somiglieranno a biscotti) e metteteli in una pirofila da forno (io ne ho di vetro della Pyrex o di ceramica di Le Creuset), sovrapponendo i dischi leggermente.

Paint the gnocchi with the melted butter and sprinkle the remaining grated Parmesan all over.

Spennellate gli gnocchi con il burro fuso e spolverateli con il Parmigiano grattugiato rimasto.

Bake in the oven for 15 minutes, then put under the grill for another 5 minutes.

Cuocete in forno per 15 minuti, più altri 5 sotto al grill.

Try them, you’ll like them, I promise.

Provateli, vi piaceranno sicuramente.

Crispy pancakes or…sofficini!

Thinking about crispy pancakes (or sofficini, as they are marketed in Italy) makes me think about my childhood. Just as it does the song I associated with this article: it’s the song that my Nonno Carlo, my paternal grandfather, used to sing to me when he was picking me up from school with his white Ford Fiesta. He made me laugh and thinking of it always brings back happy memories.

Pensare ai sofficini mi fa pensare alla mia infanzia. Proprio come fa la canzone che ho abbinato a questo articolo: era quella che mi cantava mio nonno Carlo quando mi recuperava da scuola a bordo della sua Fiesta bianca. Mi faceva ridere e quando ci penso mi sento felice.

Back to the recipe, when I moved to the UK I didn’t actually know that you also had sofficini! The name is different and I understand that some of the fillings are as well and I think that they don’t have a great reputation here, but I love them and many do back in Italy. To be honest they are not the healthier food in the world, but you can always bake them rather than frying them!

Tornando alla ricetta, ho scoperto solo di recente che i sofficini vengono venduti anche qui in Regno Unito, anche se si chiamano Crispy Pancakes. Anche i ripieni, credo, sono diversi da quelli italiani e la reputazione di questa pietanza non è delle migliori, mi pare di capire, ma io li adoro. Vero è che non si tratta della pietanza più salutare del mondo, ma invece di friggerli si possono cuocere in forno!

I did try to make them a couple of times before, but the recipe I found was really rich and a bit heavy, so this time I’ve done some more research and found one which is just as tasty but much healthier. Given the richness of the filling, it’s better to have a lighter pastry, I think.

Li avevo già fatti un paio di volte, ma la ricetta che avevo trovato era davvero troppo ricca e pesante, dunque questa volta sono andata alla ricerca di un’alternativa e ne ho trovata una altrettanto gustosa ma molto più salutare. Dato che il ripieno è già ricco, trovo sia meglio avere una pasta più leggera per l’esterno.

The flour and the water needed are easily measured with a mug, so if you want to double the number of pancakes, you simply need to add one mugful of both ingredients! Easy!

La farina e l’acqua sono misurate con una tazza, dunque se volete raddoppiare il numero di sofficini, basta aggiungere una tazza di entrambi gli ingredienti! Facile!

Ingredients for 6 pancakes / Ingredienti per 6 sofficini:

1 cup of plain flour (but you can use wholemeal, spelt, even gluten free!) / tazza di farina bianca (ma potete usare integrale, di farro o persino senza glutine)

1 cup of water / tazza di acqua

1 tbs olive oil / cucchiaio di olio d’oliva

a pinch of salt / un pizzico di sale

You will also need two eggs (or egg whites, if you prefer) and breadcrumbs for the coating. Serviranno anche due uova (o due albumi, se preferite) e pangrattato per la panatura.

In a medium sized pot mix the water, salt and oil together. Bring to the boil, then add the flour all at once and beat it thoroughly until you obtain a smooth and elastic dough and all the flour is incorporated. Take off the heat and leave to cool.

In una pentola di medie dimensioni, mescolate l’acqua, l’olio e il sale. Portate ad ebollizione e versate tutta la farina, iniziando a sbattere energicamente fino ad ottenere un impasto liscio ed elastico e tutta la farina sia incorporate. Togliete dal fuoco e lasciate raffreddare.

While the dough cools down, you can make a start on the fillings. Mentre l’impasto si raffredda, potete iniziare con i ripieni.

Spinach, cheese and white sauce / Spinaci, formaggio e besciamella:

For 6 pancakes you will need 250gr of spinach, wilted in a pan with some oil and salt, then drained well and chopped.

Per 6 sofficini serviranno 250gr di spinaci, fatti appassire in padella con olio e sale e scolati bene e tritati.

Prepare the white sauce by melting about 10 gr of butter, adding 1 tbs of flour, a pinch of salt and a pinch of ground nutmeg and leave to cook for a few minutes, then adding 200 ml of milk, stirring and cooking until it thickens.

Preparate la besciamella fondendo 10gr di burro e aggiungendoci 1 cucchiaio di farina, un pizzico di sale e un pizzico di noce moscata, facendo cuocere alcuni minuti, prima di aggiungere 200 ml di latte, continuando a mescolare e cuocere fino a che si addensa.

Then add about 50gr of grated cheese of your choice. Aggiungete 50gr di formaggio grattugiato a vostra scelta.

Mix the spinach to the white sauce and leave to cool.

Mescolate gli spinaci alla besciamella e lasciate raffreddare.

Ham, mozzarella and white sauce / prosciutto cotto, mozzarella e besciamella:

Mix some white sauce to 100gr of chopped ham and one chopped and well drained mozzarella.

Mescolate alla besciamella 100gr di prosciutto cotto tritato e una mozzarella tagliata a cubetti e sgocciolata bene.

Mozzarella and tomato / mozzarella e pomodoro:

Mix one chopped and well drained mozzarella with some tomato passata and some olive oil.

Mescolate una mozzarella a cubetti ben scolata con della passata di pomodoro e olio d’oliva.

If you prefer to bake them, it’s now time to turn the oven on at 180 degrees celsius.

Se preferite cuocerli al forno, è il momento di accenderlo a 180 gradi.

Once the dough is cold, flour your surface, then roll out the dough to about 1/2 cm thickness, then cut circles of about 15cm diameter (I use a ravioli maker, which is useful to seal them as well).

Quando l’impasto è freddo, infarinate il piano di lavoro e stendetelo fino ad uno spessore di circa 1/2 cm, per poi tagliare cerchi di circa 15 cm di diametro (io uso uno stampo da ravioli, che è anche utile per sigillarli).

Put a couple of spoonfuls of filling in the middle of the dough, then seal the edges in a half-moon shape, pressing well.

Mettete un paio di cucchiaiate di ripieno nel centro e sigillate i bordi a formare una mezzaluna, premendo bene.

Beat the two eggs in a large bowl and flatten the breadcrumbs in a dish, then quickly dip each sealed pancake in the eggs first, then coat them well with the breadcrumbs.

Sbattete le due uova in una ciotola capiente e distribuite il pangrattato su un piatto, immergete velocemente ogni sofficino nelle uova e poi ricopritelo bene di pangrattato.

Bake in the oven for about 10-15 minutes, until the outside gets crispy and golden. If you prefer to fry them, 5 minutes in hot oil is enough.

Cuocete in forno per 10-15 minuti fino a doratura. Se li preferite fritti, 5 minuti in olio bollente e sono pronti.

Carbonara my way / Carbonara a modo mio

Now, first of all, I am not from Rome, hence this is Carbonara my way. However, there is a rule, which no matter where you are from must be respected, in order to call this a Carbonara: NO CREAM. If you put cream in it (de gustibus…), then you don’t call the dish a Carbonara, simple as that.

Prima di tutto, non sono romana, di conseguenza il titolo carbonara a modo mio. Tuttavia, c’è una regola, che indifferentemente da dove provenite va rispettata, per chiamare questo piatto carbonara: niente panna. Se ci mettete la panna (de gustibus…) allora non la chiamate carbonara, semplice.

Before writing this article, I’ve done some research, as I was expecting to find a registered recipe for Carbonara, however I couldn’t find any. What I’ve learnt, however, is that the origin of the dish is uncertain: some say it’s an evolution of ‘cacio e ova’ (cheese and eggs) a pasta dish that those making charcoal used to consume while waiting for it to be ready. Others say that it came during WWII, when the Americans brought bacon to Italy. Some restaurateurs found an opportunity to create a dish using bacon and eggs. The bacon then has been replaced by ‘guanciale’ which is a cured meat made from pork cheek. I use Italian smoked pancetta (which I do find in British supermarkets) in my version and it’s just as tasty.

Prima di scrivere questo articolo, ho fatto un po’ di ricerche, perché mi aspettavo di trovare una ricetta depositata per la carbonara, tuttavia non ne ho trovato traccia. Quello che ho imparato però, è che l’origine del piatto è incerta: alcuni dicono che è l’evoluzione di ‘cacio e ova’, piatto tipico dei carbonai, che consumavano durante l’attesa che la carbonella fosse pronta. Altri dicono che l’origine risale alla Seconda Guerra Mondiale, quando gli americani portarono il bacon in Italia. Alcuni ristoratori videro un’opportunità per creare un piatto usando bacon e uova. Pare anche che col tempo il bacon sia stato sostituito dal guanciale, prodotto locale nella zona di origine della carbonara. Io uso pancetta affumicata nella mia versione.

And remember that traditionally Carbonara calls for spaghetti, which is a more appropriate type of pasta here, than with ragù! 😉 The rule about the eggs would be to have 1 egg for each serving + 1. I tend to use 1 yolk for each serving, plus one whole egg. I also use a mix of Pecorino and Parmigiano Reggiano cheese, about half and half.

La carbonara si serve tradizionalmente con gli spaghetti, ovviamente. La regola delle uova sarebbe 1 uovo per commensale + 1. Io faccio 1 tuorlo per commensale, più un uovo intero. Inoltre uso un misto di pecorino e Parmigiano, più o meno metà e metà.

Ingredients for 2 servings / Ingredienti per due porzioni:

160gr spaghetti

2 egg yolks / tuorli d’uovo

1 whole egg / uovo intero

50gr smoked pancetta, cubed / pancetta affumicata a cubetti

50gr of grated Pecorino cheese / pecorino grattugiato

50gr of grated Parmigiano Reggiano / Parmigiano grattugiato

a generous grating of pepper (I prefer black) / una generosa grattata di pepe (io lo preferisco nero)

The first thing I do is cook the pancetta in a large pan until golden and crispy, do not rush this and keep the hob to a medium heat. Then set aside.

La prima cosa che faccio è rosolare la pancetta in una padella capiente fino a doratura. Non abbiate fretta e mantenete il fornello a fuoco medio. Lasciate da parte.

Bring the water to a boil in a large pot, add about a handful of rock salt, then drop the spaghetti. Cook to about one minute less than the time on the packet.

While the pasta cooks, beat the eggs and mix with the cheese and pepper. Carefully add about 2 tablespoons of the pasta cooking water and mix. Set aside.

Mentre la pasta cuoce, sbattete le uova e mescolate con il formaggio e il pepe. Aggiungete un paio di cucchiai dell’acqua di cottura della pasta e mescolate. Lasciate a parte.

Drain the spaghetti and add them back to the pan with the pancetta. Bring back to the hob while mixing well. Take off the heat and add the egg mix. Mix well, then serve. More cheese can be added to the plate, if you like.

Scolate gli spaghetti e versateli nella padella con la pancetta, riportandola sul fuoco mentre mescolate bene. Lontano dal fuoco, aggiungete le uova e mescolate bene. Se volete potete aggiungere altro formaggio una volta nei piatti.

As you can see, no need for cream!
Come vedete, la panna non serve!

Pickled courgettes – Zucchine sott’aceto

I personally love pickled vegetables! I have quite the collection of books about preserves and pickles and although I don’t prepare them often, I know what flavours I am looking for.

Adoro le verdure sottaceto! Come al solito, ho una collezione piuttosto estesa di libri su conserve e sottaceti e anche se non ne preparo di frequente, so che tipo di sapore cerco.

Last year, our allotment left us with a large quantity of green tomatoes which didn’t ripen in time, so I found this recipe for pickled green tomatoes and made two large jars full of them. Once we tasted them, I particularly liked the flavour of the pickle and it suddenly reminded me of some pickled courgettes that my uncle Eddie’s mother used to prepare. So I said to myself that I would make those next.

Lo scorso anno, il nostro orto ci lasciò una quantità di pomodori verdi che non erano maturati in tempo, dunque ho trovato questa ricetta per pomodori verdi sottaceto, con la quale ho preparato due vasi pieni. Una volta assaggiati, ho particolarmente apprezzato il sapore della macinatura, che mi ha ricordato le zucchine sottaceto che faceva la mamma di mio zio Eddie. Dunque mi sono detta che le prossime sarebbero state zucchine!

The opportunity came when we bought a batch of particularly bitter courgettes, so here they are!

L’opportunità perfetta è arrivata con l’acquisto di alcune zucchine particolarmente amare, e così eccole!

Ingredients for about 700ml of pickling liquid / Ingredienti per 700ml di liquido da sottaceti:

600ml of cider vinegar / aceto di mele

150ml water / acqua

2tbs sugar / cucchiai di zucchero

1tbs salt / cucchiaio di sale

Mix the vinegar, water, salt and sugar in a pan and bring to the boil. Leave to simmer for 10 minutes. Leave to cool slightly.

Mescolate aceto, acqua, sale e zucchero in una pentola e portate ad ebollizione. Lasciate sobbollire per 10 minuti. Lasciate raffreddare leggermente.

For each jars / Per ciascun vasetto:

1 clove of garlic / spicchio di aglio

1 or 2 dried chillies (depending how spicy they are) / 1 o 2 peperoncini secchi (a seconda di quanto sono piccanti)

1/2 tsp mustard seeds / cucchiaino di semi di senape

1 bay leaf / foglia di alloro

Prepare each jar with the spices. Preparate ogni vasetto con le spezie.

Add the courgettes, which I cut in three chunks, then quartered. Aggiungete le zucchine, che ho tagliato in tre parti e ciascun cilindro in quarti.

Pour the warm pickling liquid in the jars, leave to sit for a few minutes, then top up to the brim and seal. Leave to cool upside-down.

Versate il liquido nei vasetti, lasciate riposare per alcuni minuti e poi aggiungete liquido fino all’orlo e sigillate. Lasciate raffreddare sottosopra.

They are delicious on their own or with some meaty dish and they can bring a simple salad alive.

Sono deliziose da sole o con un piatto di carne e possono ravvivare una semplice insalata.

Spaghetti al sugo di tonno

This is my go-to quick, easy and cheap pasta sauce since I started cooking. I must confess that I like tinned tuna and I find it a cheap and versatile ingredient. If you are using ragù (bolognese sauce) on spaghetti, STOP! Ragù goes with rough pasta, like tagliatelle, NOT spaghetti. This is your new spaghetti sauce, trust me!

Questo è il mio condimento preferito per la pasta da sempre. Ho un debole per il tonno in scatola e lo trovo un ingrediente versatile. Agli italiani suonerà strano, ma per gli anglosassoni e americani il ragù si usa con gli spaghetti, questa ricetta è il mio tentativo per convincerli ad usare un altro condimento con i poveri, bistrattati spaghetti!

To keep it simple, you don’t even need an onion base, you can do, but it’s not fundamental. Therefore it’s literally 3 ingredients.

Per farla semplice, non è neanche necessaria una base di cipolla, potete fare il soffrittino, ma è buona anche senza, dunque davvero 3 ingredienti.

You can enrich it with the addition of olives or capers, so it’s up to your taste.

Potete arricchirla con olive o capperi, a dipende dai vostri gusti.

Ingredients / Ingredienti:

1 tin of tuna in oil / scatoletta di tonno sott’olio

2 tbs of tomato sauce (passata) / cucchiai di passata di pomodoro

1tbs olive oil / cucchiaio di olio d’oliva

Warm the olive oil in a large pan and add the tomato sauce. Scaldate l’olio in una padella grande e aggiungete la passata di pomodoro.

Drain the tuna and add it to the pan, lowering the heat to a gentle simmer. Scolate il tonno e aggiungetelo alla padella, abbassando la fiamma a lieve bollore.

Cook the spaghetti in salted boiling water and drain it when it’s still a bit under, keeping some of the cooking water aside. Cuocete gli spaghetti in acqua bollente salata, scolandoli ancora al dente. Tenete un po’ dell’acqua di cottura.

Add the spaghetti to the pan and let them soak the sauce. Finish cooking them by adding some of the cooking water: this will amalgamate the flavours and make them silky and luscious.

Aggiungete gli spaghetti nella padella e finite la cottura aggiungendo poca acqua in modo che la salsa si amalgami e diventi cremosa (gli chef dicono ‘risottare’).

As mentioned earlier, you can add olives, or capers and you can first sweat some onions to start the sauce, up to you! Come ho detto prima, potete aggiungere olive o capperi e potete fare un soffritto di cipolla per avviare il sugo, come preferite!

I think that the English title of this recipe doesn’t sound very appealing, but trust me on this one! Funnily enough, I thought this would be a fairly known recipe, but apparently it isn’t! In my opinion is great to impress friends, but easy to put together, the only time-consuming part is to cook the pancakes!

Mi scappa da ridere leggendo la traduzione inglese, perché non suona molto appetibile, ma sono sicura che gli amici italiani che mi leggono sappiano che in realtà è un’ottima ricetta. Di questi tempi in qui siete tutti chiusi in casa per via del Coronavirus, vedo che chi più chi meno vi cimentate in cucina, tempo dunque di rispolverare questa ricetta nella mia versione, no?

It’s basically a baked pasta, without the pasta, which is replaced by the pancakes. It’s quite a filling dish, perfect for a party and quite versatile, as you can pretty much tailor the filling to your own taste, but you can try my version first.

Una pasta al forno senza pasta, che viene sostituita dalle crespelle, bella sostanziosa e perfetta per sfamare una banda di amici o una famiglia numerosa. Potete adattare il ripieno ai vostri gusti personali, ma vi propongo il ripieno che preferisco

Ingredients for about 8 pancakes / Ingredienti per circa 8 crespelle:

200 gr plain flour / farina bianca

3 whole eggs, beaten / uova intere sbattute

30 gr melted butter / burro fuso

350 ml full fat milk / latte intero

1 pinch of salt / un pizzico di sale

For the filling / Per il ripieno:

500 gr ricotta cheese / ricotta

500 gr baby spinach / spinaci

200 gr ham / prosciutto cotto

100 gr grated Parmesan / Parmigiano grattugiato

Salt to taste / sale a piacere

For the sauce / Per la besciamella:

50 gr butter / burro

1 tbs plain flour / cucchiaio di farina

500 ml full fat milk / latte intero

50 gr grated cheddar (or Parmesan) / cheddar (o Parmigiano) grattugiato

A pinch of ground nutmeg / un pizzico di noce moscata grattugiata

Salt to taste / sale a piacere

Prepare the batter for the pancakes by mixing all the ingredients together ensuring that there are no lumps. Preparate la pastella per le crespelle mescolando tutti gli ingredienti in un composto senza grumi.

Heat the pan and lightly grease it with some oil. Cook all the pancakes until they are slightly coloured but still pliable. Leave to cool.

Scaldate la padella e ungetela leggermente con olio. Cuocete le crespelle fino a che si colorano un po’, restando flessibili. Lasciatele raffreddare.

Cook the spinach in a pan with some salt until wilted. Drain and squeeze out the excess liquid, then chop them as finely as possible.

Cuocete gli spinaci in padella con un po’ di sale fino a che sono appassiti, scolateli e strizzateli bene, per poi tritarti finemente.

Chop the ham into strips or pieces. Tritate il prosciutto in striscioline o pezzetti.

Mix the ricotta with the Parmesan, add the spinach and the ham, then season to taste.

Mescolate la ricotta col Parmigiano, aggiungete gli spinaci e il prosciutto e salate a piacere.

Prepare a oven proof casserole (I use a Pyrex glass one) and drizzle some oil on the bottom.

Preparate una teglia da forno (io ne uso una di Pyrex) con un filo d’olio sul fondo.

Take a pancake and put some filling on one half, then start rolling, tucking in the sides. It will look like a wrap. Place the first ‘crespella’ in the casserole and repeat for all the remaining pancakes.

Prendete una crespella e mettete un po’ del ripieno su una metà, poi avvolgete rimboccando i lati a formare un cilindro. Mettete la crespella nella teglia e ripetete per le rimanenti.

Prepare a white sauce by melting the butter in a pot. Add the flour and let cook to reach a hazelnut colour, then start adding the milk little by little. Keep whisking to avoid any lumps. Once all the milk is incorporated and the sauce starts thickening, add the cheese and the nutmeg, then taste and season if necessary. Pour the sauce over the pancakes.

Preparate la besciamella facendo sciogliere il burro in un pentolino. Aggiungete la farina e fate cuocere fino a che diventa color nocciola e iniziate ad aggiungere il latte poco a poco, continuando a mescolare con una frusta per prevenire grumi. Una volta che tutto il latte è incorporato e la besciamella inizia ad addensarsi, unite il formaggio e la noce moscata, assaggiate e regolate di sale. Versate la besciamella sopra alle crespelle.

Grate some cheddar or Parmesan on top, then bake in a hot oven until golden and crunchy on top.

Grattate un po’ di formaggio sulla superficie (io preferisco il cheddar, ma il Parmigiano va benissimo) e cuocete in forno caldo fino a doratura.

To me, anything with white sauce and plenty of cheese on top is just delicious, but I bet your friends will love this! Let me know!

Boxty pancakes – pancakes di patate

So, while searching for the recipe of the potato bread, I found soooo many potato-based bready recipes. Most of them Irish, like these boxty pancakes. It looks like there is some controversy around boxty, as I found recipes for this pancake-type, but also for a proper baked bread, which in appearance is similar to soda bread. I think that the traditional version is this, griddled on a pan: it definitely feels like a stodgy pancake, but the flavour is great!

Dunque mentre cercavo la ricetta delle focaccine di patate, mi sono imbattuta in tantissime ricette di pani o simili a base di patate. La maggior parte irlandesi, come questi pancakes chiamati boxty. Mi pare ci sia un po’ di dibattito in merito, dato che ho trovato ricette per pancakes, cotti in padella, ma anche per un pane al forno, che a vedersi somiglia al soda bread, altro pane popolare in Irlanda, che magari proporrò in futuro.

This recipe is quite easy and the only time consuming task is to boil one potato. Questa ricetta è piuttosto semplice e si perde solo un po’ di tempo per lessare una patata.

Ingredients / Ingredienti:

125 gr boiled potatoes, peeled and mashed / patate lessate e pelate

125 gr peeled raw potatoes, grated / patate crude, pelate e grattugiate

125 gr plain flour / farina bianca

1/2 tsp salt / cucchiaino di sale

1/4 tsp bicarbonate of soda / cucchiaino di bicarbonato di sodio

250 ml of buttermilk (or milk with some lemon juice / latticello (o latte con poche gocce di limone)

Some oil to grease the pan / olio per ungere la padella.

Mix all the ingredients together to a thick batter (you may not need all the buttermilk, so add it gradually). Mescolate tutti gli ingredienti fino ad ottenere una pastella densa (potrebbe non servire tutto il latticello, dunque aggiungetelo poco a poco).

Heat the pan and scoop small ladle of the batter on it. Cook for 2-3 minutes on one side, then for another minute on the other.

Scaldate la padella e versateci piccoli mestoli di pastella. Cuocete per 2-3 minuti su un lato, giratele e cuocete per un altro minuto.

I am serving them for dinner with some nice and crunchy bacon! Saranno la cena con un po’ di bella pancetta croccante!

I love the BBC! As Italian, seeing the variety of interesting and enriching programmes, documentaries and amazing dramas that the national tv offers it’s refreshing and exciting. Being so passionate about history, one of my favourite thing to watch is the ‘Back in time’ series. They recruit a British family to ‘travel’ back in time by changing their house/life/business to mirror the different time periods, usually starting with the Victorian era.

Adoro la BBC! Da italiana abituata al deprimente palinsesto RAI (parlo dei tre canali tradizionali), vedere la varietà di programmi interessanti ed istruttivi , i documentari e le bellissime fictions che la tv nazionale offre è incredibile. Essendo così appassionata di storia, uno dei miei programmi preferiti è la serie ‘Back in time’. Arruolano famiglie inglesi per ‘viaggiare’ indietro nel tempo, cambiando la loro casa/vita/azienda a rispecchiare i differenti periodi storici, solitamente a partire dall’epoca vittoriana.

Sorry to be a bore, all this to say that in time, I’ve found out many interesting cultural details AND culinary inspiration! For example, in the first episode of the new series, they made what was called potato bread. In reality, it didn’t look like a bread, more like an English muffin, tiny, round and thin. I was enthralled, particularly from the comments, as they were saying that it tastes and feel like eating bread.

Mi scuso se vi ho annoiati, ma tutto questo è per dire che nel tempo, ho scoperto interessanti dettagli culturali E ispirazioni culinarie! Ad esempio, nella prima puntata della nuova serie, hanno preparato quello che chiamano pane di patate. In realtà non somigliava molto a pane, più a delle focaccine. Ero affascinata, particolarmente dai commenti, dato che dicevano che il gusto e la consistenza erano quelli del pane.

Naturally I started researching for a suitable recipe to replicate. I own many (possibly too many!) cookery books, Italians and British, some of which include ancient, traditional recipes and I quickly found one which could be the one…IT WAS!

Ovviamente ho iniziato a cercare una ricetta da provare. Possiedo molti (forse troppi!) libri di cucina italiani ed inglesi, alcuni dedicati a ricette antiche e tradizionali e ho trovato una che sembrava quella adatta…LO ERA!

Ingredients / Ingredienti:

170 gr plain flour / farina bianca

2 tsp baking powder / cucchiaini lievito in polvere

1/2 tsp salt / cucchiaino di sale

115 gr mashed potato / patata lessa schiacciata

5-6 tbsp water (may need more) / cucchiai d’acqua (potrebbe servirne di più)

30 gr butter / burro

Mix all the ingredients together, adding more water if needed, but little at time. The dough should be soft and slightly sticky.

Impastate tutti gli ingredienti insieme, aggiungendo più acqua se necessario. L’impasto dovrà risultare morbido e leggermente appiccicoso.

Turn the oven on at 180 degrees Celsius. Accendete il forno a 180 gradi.

Flour your surface and roll the dough to about 1 cm thickness. Use a round cutter to make the rolls. The number of rolls you’ll get will depend upon how big your cutter is.

Infarinate il piano di lavoro e stendete l’impasto ad 1 cm di spessore. Usate un coppapasta per formare le focaccine. Il numero che otterrete dipenderà dalla dimensione del coppapasta.

Bake for about 20 minutes or until golden on top. Cuocete per 20 minuti o fino a doratura.

Since starting this blog, one of my objectives was to make non-Italians understand how Italian cuisine is diverse from Region to Region and from City to City and so different from what is commonly known abroad. The recipe today is a perfect example of a dish that you will eat ONLY in Ferrara (my hometown), a bit like the Tenerina, and at the same time an example of the culinary history which dates back centuries: this is an original medieval recipe.

Uno dei miei obiettivi quando ho aperto questo blog era aiutare gli stranieri a capire la diversità della cucina italiana, come sia differente da regione a regione e da una città all’altra, oltre ad essere molto più varia di quella che conoscono dai ristoranti italiani all’estero. La ricetta di oggi è perfetta perché si può mangiare soltanto a Ferrara Un po’ come la Tenerina) ed è allo stesso tempo esempio della storia centenaria della cucina italiana: è una ricetta medievale.

In medieval times people seemed to love combining sweet and savoury flavours and this recipe is, to me, one of the finest examples: think of it like a pasta pie, with a sweet pastry to encase the pasta, which is enriched by a white ragù with mushrooms and truffles, béchamel (white sauce) and Parmesan. It was a dish for the wealthy, initially devised by the cook of the Estensi family, Cristoforo da Messisbugo. The version we eat today is an evolution of his original recipe.

In epoca medievale pare che la combinazione di dolce e salato fosse davvero popolare e per me questa ricetta è uno degli esempi più raffinati: è una torta di pasta, con pasta frolla a racchiudere la pasta, arricchita da un ragù bianco con funghi e tartufo, besciamella e Parmigiano. Era un piatto per i nobili, originariamente ideato dal cuoco della corte Estense: Cristoforo da Messisbugo. La versione che si mangia al giorno d’oggi è l’evoluzione della sua ricetta originale.

It is not difficult to make, but it is a bit laborious, with many different elements to prepare, let cool and assemble, so I tend to make it for special occasions, the most recent was our anniversary this week. If you don’t like the idea of using sweet pastry (bearing in mind that it won’t be as sweet as the one you would use for a tart), you can use puff pastry, but I personally prefer the original recipe. Also puff pastry makes it a bit greasier. In Ferrara you can find and buy both versions and you can prepare a big pie to slice or single portions, which look very elegant to me.

Non è un piatto difficile da preparare, ma è laborioso, con molti elementi da preparare, lasciar freddare e assemblare, dunque tendo a prepararlo per occasioni speciali, la più recente è stato il nostro anniversario questa settimana. Se non vi piace l’idea della pasta frolla (che sarà comunque meno dolce di quella per una crostata), potete usare pasta sfoglia in alternativa, ma io preferisco la ricetta originale, anche perché la pasta sfoglia rende il pasticcio troppo unto. A Ferrara potete trovare e comprare entrambe le versioni e con questa ricetta potete preparare un pasticcio grande da affettare, oppure mono porzioni, che trovo molto eleganti da servire.

This recipe is my personal version, which is adapted to my taste and the ingredients that I can easily obtain, you may find other ingredients if you search on the internet. Questa è la ricetta che uso, adattata ai miei gusti e agli ingredienti che posso trovare facilmente, potete trovare altre versioni in internet, se volete.

Ingredients for 4 portions / Ingredienti per 4 porzioni:

Sweet Pastry / Pasta frolla:

450 gr plain flour / farina bianca

180 gr cold butter, cubed / burro freddo a cubetti

100 gr caster sugar / zucchero bianco

3 eggs / uova

1/2 lemon zest / mezza buccia di limone grattugiata

A pinch of salt / un pizzico di sale

You can either make the pastry by hand or in a processor. Either way, start first by mixing the flour, sugar and salt, then add the butter and rub with the tip of your fingers (or pulse, in the processor). Once it resembles to breadcrumbs, add the eggs and the lemon zest and bring it all together until smooth. Wrap in cling film and leave in the fridge to rest.

Potete fare la pasta frolla a mano o con un robot da cucina. In entrambi i casi, iniziate mescolando farina, zucchero e sale e aggiungete il burro. Sfregate burro e farina con la punta delle dita (o usate il pulse, con il robot). Quando somiglia a pangrattato, aggiungete le uova e la scorza di limone e impastate fino a che il composto risulta liscio. Avvolgete nella pellicola e lasciate riposare in frigo.

For the ragù/ per il ragù:

150 gr minced beef / macinato di manzo

150 gr minced pork / macinato di maiale

1 glass of white wine (dry) / bicchiere di vino bianco (secco)

1 celery stalk / gambo di sedano

1 carrot, peeled / carota pelata

1/2 onion / cipolla

2 tbs olive oil / olio d’oliva

15 gr dried porcini / porcini secchi

Salt to taste

1 tbs of truffle oil or a generous grating of fresh truffle shavings / 1 cucchiaio di olio al tartufo o una generosa grattugiata di tartufo fresco

Finely chop the onion, carrot and celery, add them to a hot pan with the olive oil and let them sweat gently. In the meantime, re-hydrate the mushrooms in hot water. When the onion is translucent, add the minced meat and leave it to caramelise. Add the glass of wine and let it cook town to a gentle heat. Chop the mushrooms and add to the meat. Add salt to taste. I like to cook until the liquid is fully absorbed: if the ragù is too moist, it may affect the final result. Once the ragù is cold, add the truffle oil or truffle shavings and mix.

Tritate finemente la mezza cipolla, la carota e il sedano e aggiungeteli all’olio d’oliva in una padella calda, lasciandoli appassire dolcemente. Nel frattempo, reidratate i funghi in un po’ di acqua calda. Quando le cipolle sono trasparenti, aggiungete il macinato e fate rosolare. Aggiungete il bicchiere di vino e fatelo assorbire a fuoco dolce. Tritate i funghi e aggiungeteli alla carne. Regolate di sale. Preferisco far assorbire i liquidi completamente: un ragù troppo umido può avere un effetto negativo sul risultato finale. Quando il ragù è freddo, aggiungete l’olio al tartufo o il tartufo fresco e mescolate.

For the béchamel (white sauce) / per la besciamella:

1/2 liter of full fat milk / litro di latte intero

1 tbs plain flour / cucchiaio di farina bianca

1 tbs butter / cucchiaio di burro

1/2 tsp ground nutmeg / cucchiaino noce moscata

Salt to taste / sale a piacere

50 gr grated Parmesan / Parmigiano grattugiato

Melt the butter in a pan, add the flour and mix well. Let it cook until light brown, then start adding the milk little by little. For this recipe, I like to keep the white sauce a bit runny, not too thick. Once the consistency is right, take it off the heat, add the nutmeg and the Parmesan and mix well. Add salt to taste. Let it cool.

Sciogliete il burro in padella, aggiungete la farina e lasciate cuocere fino a che diventa leggermente brunita. Iniziate ad aggiungere il latte poco alla volta. Per questa ricetta, lascio la besciamella un po’ più liquida del solito, no troppo densa. Quando avete raggiunto la consistenza desiderata, togliete dal fuoco, aggiungete la noce moscata e il Parmigiano e mescolate bene. Regolate di sale. Lasciate raffreddare.

Pasta:

250 gr of maccheroncini rigati (if you don’t find it, you can use penne rigate

Hot boiling water in a big pasta pot, about a tablespoon of rock salt.

The trick is to cook the pasta half of the time indicated on the packet. It will finish cooking in the pasticcio in the oven. Drain the pasta and mix with the white sauce and the ragù. Leave to cool.

Cuocete la pasta per metà del tempo di cottura. Scolatela e conditela con la besciamella e il ragù, mescolando bene. Leave to cool.

Preparing the pasticcio / Prepariamo il pasticcio:

Turn the oven on at 180 degrees celsius. Accendete il forno a 180 gradi.

If you are making a big one, you can use a springform cake tin and divide the dough in two, rolling a slightly thicker round base to put at the bottom of the cake tin, add the filling forming a round-ish mound and covering with a thinner layer of pastry on top and seal carefully all around. The traditional shape is that of a Christmas pudding, roughly. If you have leftover pastry, you can decorate as you wish. Brush the top with egg yolk.

Se volete preparare un pasticcio da dividere, potete usare uno stampo da torte a cerniera. Dividete l’impasto in due e stendete la base leggermente più’ spessa e mettetela nello stampo. Versate il ripieno a formare una cupola e ricoprite con la seconda parte di pasta frolla, stesa leggermente più sottile, sigillando i bordi con cura. La forma tradizionale è a cupola e potete usare ritagli di pasta per decorare a piacere. Spennellate con un tuorlo d’uovo.

Bake in the oven until golden and shiny on top. Cuocete in forno fino a doratura.

If you want to make single portions, just create 4 thicker bases and 4 thinner and wider tops. Put the bases on an oven tray covered with grease proof paper, carefully arrange the filling on top of each base, then cover with the pastry top to form a dome and seal carefully all around. Decorate and brush with egg yolk.

Se preferite i pasticci mono porzione, stendete la pasta spessa e ritagliate 4 cerchi per la base. Ristendete la pasta rimasta leggermente più sottile e ritagliate 4 cerchi un po’ più grandi. Mettete le basi su una teglia coperta di carta da forno e versate il ripieno con cura, coprendo con i coperchi di pasta a formare una cupola e sigillate i bordi. Decorate e spennellate con tuorlo d’uovo.

Risotto al radicchio

Following the risotto rice article and the recipe for the Jerusalem artichokes risotto and the one with mushrooms, here is another risotto recipe.

Dopo l’articolo sul riso per risotti e le ricette del risotto coi topinambour e di quello ai funghi, è tempo di preparare un altro risotto.

Returning from Italy after Christmas, we had loads of Italian goodies and amongst them, some radicchio, which we always struggle to find here in the UK. We had some in a salad, but I reserved a little to prepare this delicious risotto: the bitterness of the radicchio marrying so well with the natural sweetness of the rice!

Tornati dall’Italia dopo Natale, abbiamo riportato alcune prelibatezze e tra queste, alcuni cespi di radicchio rosso. Parte è stato mangiato in insalata, ma ne ho conservato un po’ per questo risotto, dove l’amaro del radicchio si sposa con la dolcezza naturale del riso!

Like any other risotto recipe, patience is key, so don’t rush and enjoy the process.

Come ogni ricetta di risotto, la pazienza è fondamentale, dunque niente fretta e divertitevi nella preparazione.

Ingredients for 2 servings / Ingredienti per due porzioni:

5 handfuls of risotto rice / pugnetti di riso da risotto

1/2 onion, finely chopped / cipolla, tritata finemente

10 ml olive oil / olio di oliva

100 ml good quality white wine (or you can use beer, to enhance the bitterness of the radicchio) / vino bianco di buona qualità (o potete usare la birra per esaltare l’amarognolo del radicchio)

1 lt chicken or vegetable stock (or water+stock cube) / brodo di pollo o vegetale (o acqua e dado da brodo)

1 head of red radicchio / cespo di radicchio rosso

30 gr grated Parmesan / Parmigiano grattugiato

Put the oil in a pot and heat it gently. Add the onion and let it sweat. Once it’s translucent, add the rice and warm it up.

Mettete l’olio in pentola e scaldatelo a fuoco dolce. Aggiungete la cipolla e fatela appassire. Quando la cipolla diventa trasparente, aggiungete il riso e tostatelo per qualche minuto.

Add the wine (or the beer) and raise the hob to a medium/low heat, stir gently until the wine has evaporated.

Aggiungete il vino (o la birra) e alzate il fornello a temperatura medio/bassa, mescolate fino a che il vino è evaporato.

At this point, finely chop the white part of the radicchio (the bottom of the head) and add it to the rice. Let it cook for a few minutes, then start adding the stock (or add the stock cube and water), one ladle at time, continue to stir often and add another ladle once the previous has been absorbed.

A questo punto, tritate finemente la parte bianca del radicchio ed aggiungetela al riso. Fatela cuocere qualche minuto e cominciate ad aggiungere il brodo (o il dado e acqua), un mestolo alla volta, continuando a mescolare di frequente e aggiungete il mestolo successivo quando il precedente è stato assorbito.

Continue this way until the rice is cooked. Then add the finely chopped red, leafy part of the radicchio, the grated Parmesan and stir gently to incorporate. Cover the pan for a few minutes to let the risotto rest.

Continuate ad aggiungere il brodo fino a cottura del riso. Poi aggiungete le foglie del radicchio tritate finemente e il Parmigiano grattugiato. Mescolate dolcemente per amalgamare il tutto e lasciate il risotto a mantecare per alcuni minuti coperto.

Risotto with mushrooms – Risotto ai funghi

We talked about the best risotto rice and about the Jerusalem artichokes risotto.

Abbiamo parlato del riso per risotti e della ricetta del risotto coi topinambour.

Now for what is probably my favourite risotto: with mushrooms. I have a soft spot for mushrooms, especially in those recipes where their flavour is enhanced and concentrated. This is one of them!

Passiamo a quello che probabilmente è il mio risotto preferito: coi funghi. A me i funghi piacciono parecchio, specialmente in quelle ricette dove il loro sapore viene esaltato e concentrato. Questa è una di quelle ricette.

Ever since moving to the UK, I’ve struggled to find wild mushrooms which taste would fit well in a risotto. Now I know which mushrooms work best (in my opinion) in a risotto: shiitake. They have a depth of flavour which is perfect in a risotto, much better than any other type I’ve tried.

Da quando ci siamo trasferiti nel Regno Unito, ho faticato a trovare un tipo di funghi che funzionasse bene nel risotto. Al momento i miei preferiti da usare sono i funghi shiitake. Hanno un gusto deciso che trovo perfetto nel risotto, molto meglio di altri funghi che ho provato.

This said, I always and I mean ALWAYS add some re-hydrated porcini mushrooms in my risotto. You can find them in the supermarkets and you simply have to leave them for 10 minutes to soak in hot water, to plump them up. You can then filter the water (as it will have a lovely taste of porcini) to also add to the risotto.

Detto questo, aggiungo SEMPRE porcini secchi al mio risotto. Basta lasciarli reidratare per una decina di minuti in acqua calda. Io uso anche l’acqua in cui riposano (filtrandola) per insaporire ulteriormente il risotto.

Ingredients for 2 servings / Ingredienti per due porzioni:

100 ml good quality white wine (sometimes I use beer for this risotto) / vino bianco di buona qualità (a volte uso la birra in questo risotto)

1 lt chicken or vegetable stock (or water+stock cube) / brodo di pollo o vegetale (o acqua e dado da brodo)

100 gr shiitake mushrooms, finely chopped / funghi shiitake, tritati finemente

5 gr dried porcini, rehydrated in warm water / porcini secchi reidratati in acqua calda

30 gr grated Parmesan / Parmigiano grattugiato

Put the butter in a pot and melt it at a gentle heat. Add the onion and let it sweat. Add the mushrooms, fresh and dried (which you have rehydrated. Once it’s translucent, add the rice and warm it up.

Mettere il burro in una pentola e fatelo sciogliere dolcemente. Aggiungete la cipolla e fatela appassire. Aggiungete i funghi (sia quelli freschi che quelli secchi reidratati. Quando la cipolla diventa trasparente, aggiungete il riso e tostatelo per qualche minuto.

Add the wine (or the beer) and raise the hob to a medium/low heat, stir gently until the wine has evaporated. If you’ve kept the water from the dried mushrooms, add it to the pan (strain it first).

Aggiungete il vino (o la birra) e alzate il fornello a temperatura medio/bassa, mescolate fino a che il vino è evaporato. Se avete conservato l’acqua dei funghi secchi, aggiungetela alla pentola (ma prima filtratela).

Start adding the stock (or add the stock cube and water), one ladle at time, continue to stir often and add another ladle once the previous has been absorbed.

Cominciate ad aggiungere il brodo (o il dado e acqua), un mestolo alla volta, continuando a mescolare di frequente e aggiungete il mestolo successivo quando il precedente è stato assorbito.

Continue this way until the rice is cooked. Then add the grated Parmesan, stir to melt it and cover for a few minutes to let the risotto rest.

Continuate ad aggiungere il brodo fino a cottura del riso. Aggiungete poi il Parmigiano grattugiato, mescolate per scioglierlo e lasciate il risotto a mantecare per alcuni minuti.

Leek and potato soup – Vellutata di patate e porro

Yes! Another soup! Can’t you feel the cold outside? Soups are the food of the season! And, sorry to repeat myself, they are a life saver when it comes to mid-week dinners!

Eh, sì, un’altra vellutata! Fuori fa freddo e zuppe e vellutate sono il cibo di stagione! E, scusate se mi ripeto, un salva-vita quando si tratta di cene infrasettimanali.

This one is really one of my favourites because it’s naturally creamy and filling, with the potatoes.

Questa è una delle mie preferite perché è naturalmente cremosa e nutriente, con le patate.

Ingredients / Ingredienti:

3-4 medium size potatoes / patate medie

3 leeks / porri

2 tbsp olive oil / cucchiai di olio d’oliva

1 chicken or vegetable stock cube / dado di pollo o vegetale

1 lt water / acqua

Salt and pepper to taste / sale e pepe a piacere

A pinch of nutmeg if you like it / un pizzico di noce moscata se vi piace

Pour the oil in the pot and add the sliced leeks. Let them sweat at a gentle heat.
Versate l’olio nella pentola e aggiungete i porri a rondelle. Lasciateli appassire a fuoco lento.

Add the potatoes, peeled and chopped, mix well and add the water and the stock cube. Raise the heat to medium, so that the soup will start to simmer.

Aggiungete le patate, pelate e tagliate grossolanamente, mescolate bene e aggiungete l’acqua e il dado. Alzate il fornello, in modo che la zuppa inizi a sobbollire.

Let it cook until the potatoes will fall apart. Fate cuocere fino a che le patate si sfaldino.

Cream the soup with a stick blender (or use a normal blender) and put it back on the hob. Taste and season (if necessary) with salt and pepper. Add the nutmeg if you like it.

Frullate la zuppa con un frullatore ad immersione (o col frullatore normale) e rimettetela sul fuoco. Assaggiate e regolate di sale (se necessario) e aggiungete il pepe e la noce moscata se vi piacciono.

If the soup is too thick, add a little water and season again if required, before serving hot with croutons and a little fresh olive oil.

Se la vellutata è troppo densa, aggiungete poca acqua e regolate di sale prima di servire, se necessario. Servite con crostini e un giro di olio di oliva a crudo.

Spinach and leeks quiche / Torta salata di spinaci e porri

Weekdays dinners can sometimes feel a bit daunting and there is nothing wrong with shortcuts and little cheats, is there? I personally love a quiche and they are pretty quick to put together, if you use shop bought pastry! Plus you can pack them with vegetables, which is good for you.

Le cene infrasettimanali possono essere una sfida e per me non c’è niente di male in piccole scorciatoie in cucina, giusto? Adoro le torte salate e sono abbastanza rapide da preparare, se usate i rotoli di pasta ‘comperi’ (come si dice dalle mie parti), comprati! In più potete riempirle di verdure, che fanno bene alla salute.

Tonight’s dinner is spinaci and leeks, with cheese, but I do have a few more recipes for quiche to share with you in future. La cena stasera è torta salata di spinaci e porri, con formaggio, ma ci saranno altre ricette da condividere con voi in futuro.

Ingredients / Ingredienti:

1 packet of ready-rolled shortcrust pastry (but you can use puff-pastry if you prefer) / confezione di pasta brisee stesa (potete usare pasta sfoglia se preferite)

800 gr baby spinach / spinaci

1 leek / porro

180 gr cream cheese / formaggio spalmabile tipo Philadelphia

50 gr grated Parmesan (or Cheddar) / Parmigiano grattugiato

1 tbs olive oil / cucchiaio olio d’oliva

1 egg, beaten / uovo sbattuto

Salt and pepper to taste / sale e pepe a piacere

First of all, wilt the spinach in a pan with olive oil and salt. Drain excess water and let cool. Do the same with the chopped leek.

Prima di tutto fate appassire gli spinaci in padella con olio e sale. Scolate dall’acqua in eccesso e fate raffreddate. Fate lo stesso con il porro, tagliato a rondelle.

Turn the oven on at 200 degrees celsius. Accendete il forno a 200 gradi.

Mix the two vegetables and add the cream cheese and the egg. Mix well, then add half the Parmesan.

Mischiate le due verdure e aggiungetevi il formaggio cremoso e l’uovo. Mescolate bene e aggiungete metà del Parmigiano.

Line a cake tin or oven proof dish with the pastry and add the filling. Distribute the remaining Parmesan on top and tuck in the pastry edges.

Foderate una teglia o un piatto da forno con la pasta e aggiungete il ripieno. Spolverate con il Parmigiano rimasto e rimboccate i lembi della pasta.

Bake for 20-25 minutes until the pastry looks golden and the cheese on top nicely melted.

Cuocete per 20-25 minuti fino a quando la pasta sarà dorata e il formaggio avrà formato una crosticina.

Any leftover would make a great lunch to take to work the next day.

Se ne avanza, avete anche il pranzo da portare al lavoro il giorno dopo.
