Fave dei morti – an Italian Halloween recipe

Halloween is not exactly an Italian celebration, given the more religiously inspired festivities which are typical of the catholic influence, however you can find ancient recipes related to All Souls’ Day, which is the 2nd of November.

Halloween non è propriamente una festività sentita in Italia, dove si seguono principalmente festività religiose a causa dell’influenza cattolica; tuttavia esistono ricette tradizionali legate al giorno dei Morti.

These little almond biscuits were traditionally left for the deaths who come back to visit their families, to sweeten their mood. The recipe is similar throughout Italy, however the shape and appearance may vary, in my region the biscuits are of different colours and flavours.

Questi biscottini alle mandorle per tradizione venivano lasciati per i morti che tornavano a visitare le loro famiglie, per addolcirne l’umore. La ricetta si trova simile in molte regioni italiane mentre la forma e l’aspetto possono variare, nella mia regione i biscotti hanno colori e gusti diversi.

The best option is to make a big batch of plain dough, then divide it in as many bowl as the flavours you wish to use. To distinguish the different flavours, add a little food colouring to each bowl.

La migliore soluzione è preparare l’impasto base, dividendolo poi in tante ciotole quanti sono i gusti che volete utilizzare. Per distinguere i diversi gusti, aggiungete un po’ di colorante alimentare a ciascuna ciotola.

For the dough (makes about 100 tiny or 50 bigger biscuits) / per l’impasto (per 100 biscottini o 50 se più grandi):

200 gr finely grounded almonds / farina di mandorle

100 gr plain flour / farina bianca

90 gr caster sugar / zucchero bianco

1 egg / uovo

25 gr softened butter / burro ammorbidito

Mix all the ingredients together to obtain a soft, pliable dough. Mescolate tutti gli ingredienti fino ad ottenere un impasto morbido e malleabile.

Divide it in 3 or 4 bowls. Dividetelo in 3 o 4 ciotole.

Now for the flavourings / Per i gusti:

1 tablespoon of cocoa powder / cucchiaio di cacao amaro in polvere

1 lemon zest, grated / la scorza grattugiata di un limone

1 tablespoon of Amaretto liqueur / cucchiaio di Amaretto di Saronno

1 teaspoon of vanilla paste / cucchiaino di pasta di vaniglia

Mix in the different flavourings with every bowl. You may need to add a little milk to the cocoa dough, as it may be too dry to work with.

I also added a bit of pink colouring with the Amaretto and some green with the vanilla.

Mescolate uno dei gusti in ciascuna ciotola. Potrebbe servire un po’ di latte per l’impasto al cacao, per evitare che si secchi troppo e diventi difficile da lavorare.

Ho anche aggiunto il colorante rosa al gusto Amaretto e un po’ di verde al gusto vaniglia.

Roll each dough into a long strip and cut the biscuits either the size of your thumbnail or double.

Formate tanti rotoli con ciascun impasto e tagliate i biscotti della dimensione dell’unghia del pollice o il doppio.

Bake in a pre-heated oven at 180 degrees celsius for about 12 minutes, then cool on a rack.

Cuocete in forno pre-riscaldato a 180 gradi per circa 12 minuti e fate raffreddare su una griglia.

These biscuits will last for at least a week in an airtight container, but don’t forget to leave some out on the 2nd November! 😉

Questi biscotti dureranno almeno una settimana in una scatola di latta, ma non dimenticate di lasciarne qualcuno per i visitatori il 2 di novembre! 😉

Bolognese? Please call it ragù

The pasta sauce commonly know as ‘Bolognese’ in English speaking countries, in Italy is known as ragù, a word derived from the French. Ragù is typical of my region, Emilia-Romagna and although there is a certified recipe to prepare it, in reality every household has its own.

Il ragù è comunemente conosciuto come ‘bolognese’ nei paesi di lingua inglese, tuttavia da ferrarese, pur riconoscendone la provenienza originaria, non posso fare a meno di precisare che in realtà è un sugo tipico dell’intera Emilia-Romagna e anche se esiste la ricetta depositata ogni famiglia ha la sua versione.

Mine is an adaptation of my grandmother Lella’s recipe, which I changed to my taste (she doesn’t like it too tomatoey, but I do!).

La mia è adattata da quella di mia nonna Lella, che ho cambiato leggermente secondo il mio gusto, dato che a lei piace più pallido, mentre a me piace con molto pomodoro.

Ragù is one of my favourite sauces and is also quite versatile: of course its common use is with pasta (preferably tagliatelle, but it works with shorter pasta such as penne but NO, NOT WITH SPAGHETTI!) and you would use it for lasagne, but I also use it with polenta to make it ‘pasticciata’ (messy). I will talk more about polenta in another post, maybe.

Il ragù è uno dei miei condimenti preferiti per la pasta, ma non solo: lo uso spesso sulla polenta per farla pasticciata, ma potrò parlare di polenta in un altro articolo.

What I tend to do, given how long a good ragù should cook for, is to prepare a large quantity and freeze it: ragù freezes very well and in my family we keep it in the small Nutella glasses which are perfect for portions (each would keep about 200gr) and stacking!

In genere preparo una bella quantità di ragù, dato il tempo di preparazione e cottura e poi congelo, usando – come da tradizione di famiglia – i bicchieri della Nutella, che offrono porzioni perfette (circa 200 gr) e si impilano bellamente in freezer.

The rule for ragù is be patient and do not rush it! The sauce needs its time to absorb the liquids and the flavours.

La mia regola per il ragù, ma non devo spiegarla agli italiani, è di avere pazienza e non affrettare la cottura, il sugo ha bisogno di tempo per assorbire i liquidi e i sapori.

Ingredients for about 2kg of ragù (12 Nutella glasses) / ingredienti per circa 2 kg di ragù (12 bicchieri da Nutella)

You will need a rather large pot. Vi servirà una pentola capiente.

500 gr good quality pork mince / macinato di maiale di buona qualità

500 gr good quality beef mince / macinato di manzo di buona qualità

1 l tomato sauce / passata di pomodoro

400 ml good quality red wine (my rule is ‘if you won’t drink it, don’t cook with it’) / vino rosso di buona qualità (la mia regola è ‘Se non lo berresti, non usarlo in cucina’)

4 medium sized carrots, finely diced / carote medie tritate finemente

4 medium sized celery stalks, finely diced / coste di sedano medie, tritate finemente

1 red onion, finely diced / cipolla rossa tritata finemente

2 tbs olive oil / cucchiai di olio d’oliva

I also use one chicken stock cube, then check the salt towards the end of the cooking and add if necessary.

Io uso anche un dado da brodo di pollo, regolando di sale a fine cottura, se necessario.

Pour the oil in the pot and turn the hob on to a medium heat. Add the chopped vegetables and let them simmer in the oil until they are translucent.

Versate l’olio in pentola e accendete il fornello a calore medio. Aggiungete le verdure tritate e lasciate appassire fino a che saranno trasparenti.

Add the meat and let it brown gently, turning it often for an even colour. Aggiungete la carne e fatela rosolare girandola spesso in modo che sia uniforme.

Add the red wine and let it absorb almost completely, keeping the heat constant. Aggiungete il vino e lasciatelo assorbire quasi totalmente, mantenendo il fornello costante.

Now add the tomato sauce and the stock cube, mix well and continue to cook at a medium heat, stirring every now and again. Aggiungete ora la passata e il dado e continuate a cuocere a fuoco medio, mescolando di tanto in tanto.

When the sauce looks reduced, check if you need to add more salt, if you do, let it simmer for a few more minutes. Quando il sugo è quasi pronto, regolate di sale se necessario e lasciate sobbollire per alcuni minuti in più.

The ragù will be ready once most of the moisture is absorbed, but the sauce still looks creamy: it will take 3 to 5 hours, depending on how moist are your meat and vegetables.

Il ragù sarà cotto quando il liquido è quasi totalmente assorbito, ma il sugo rimane cremoso: ci vorranno dalle 3 alle 5 ore, a seconda di quanto acquose sono le verdure e la carne.

Once the sauce is cold, pour it into containers (or Nutella glasses) and freeze it, or use it immediately in your lasagne!

Una volta freddo, versatelo in contenitori (o nei bicchieri della Nutella) e congelatelo, o usatelo subito per le lasagne!

I love Tuscany, it’s one of my places of the heart, not only because it’s a beautiful region, but also because one of my best friends comes from there and I’ve spent so many happy moments with her there.

Amo la Toscana, è uno dei miei posti del cuore, non solo perché è una zona splendida, ma anche perché una delle mie migliori amiche viene da lì e lì abbiamo passato tanti bellissimi momenti insieme.

Obviously, since I’ve been living in the UK, the opportunities to visit the area are slimmer, however the boyfriend and I went to the south of Tuscany (Maremma) on holiday last Summer.

Chiaramente, da quando vivo nel Regno Unito, le opportunità di visitare la zona sono ridotte, ma l’estate scorsa io e il mio fidanzato ci abbiamo passato parte delle vacanze estive, precisamente in Maremma.

Aside from visiting lovely places, which were just as beautiful as I remembered them, we ate delicious food!

A parte visitare alcuni posti splendidi, che erano giusto come li ricordavo, abbiamo mangiato benissimo!

While leaving to go back to Ferrara, we stopped at a farm, where we bought some local produce and the lady offered us some of her home baked cantucci. Now, I knew cantucci pretty well, but she made them a little differently!

Sulla strada per tornare a Ferrara, ci siamo fermati ad un’azienda agricola dove abbiamo comprato alcuni prodotti locali e la padrona di casa ci ha fatto assaggiare i suoi cantucci fatti in casa. Conosco i cantucci, ma lei li preparava un po’ diversamente!

So, here’s her version of the famous biscuits! If you want to stick to tradition, just use plain flour instead!

Ecco la sua ricetta, se volete rimanere fedeli alla tradizione, usate della farina bianca!

Ingredients for about 30 biscuits / Ingredienti per circa 30 biscotti:

250gr whole meal spelt flour / farina di farro integrale

150 gr sugar / zucchero

1 egg / uovo

1/5 tsp baking soda / cucchiaino di lievito per dolci

110 gr whole almonds / mandorle intere

1 tbs honey / cucchiaio di miele

Zest of one orange / scorza di un’arancia

10ml Marsala / Marsala

A pinch of salt / un pizzico di sale

30gr softened butter / burro ammorbidito

Another egg to glaze – un altro uovo per lucidare

Warm the oven to 180 degrees celsius. Scaldate il forno a 180 gradi.

Mix all the ingredients together and form a soft dough. Tip it on a floured surface and form two long sausages, then flatten them gently with your hands.

Mescolate tutti gli ingredienti fino ad ottenere un impasto soffice. Rovesciatelo su una superficie infarinata e formate due salsicciotti lunghi, poi appiattiteli delicatamente con le mani.

Glaze the surface with the egg wash and bake in the oven for about 15-20 minutes, until the top is golden.

Spennellare con l’uovo sbattuto e cuocere in forno per 15-20 minuti fino a doratura.

Leave the oven on. Lasciate il forno acceso.

With a sharp knife, cut the dough at an angle to form the biscuits. Then bake them again for a further 10 minutes.

Usando un coltello affilato, tagliate tanti biscotti in diagonale e cuoceteli per una decina di minuti.

In Italy, Cantucci are served with Vin Santo (holy wine): you dip them in the wine to soften them and that’s it! They are yet delicious with coffee or tea 🙂

In Italia si servono ovviamente col Vin Santo, ma sono buoni anche col caffè!

Home made pasta can be a daunting task, but the reality is that it only takes practice. La pasta fatta in casa può sembrare una cosa spaventosa, ma in realtà è tutta questione di pratica.

If you make peace with the fact that it will not look that great to start with (but if you follow the recipe, it will taste good!), little by little you will succeed. Se vi rassegnerete al fatto che non avrà un aspetto meraviglioso, all’inizio (ma, se seguirete la ricetta, sarà comunque buona!), poco a poco avrete successo.

It happens all the time to me, when I make orecchiette according to my grandmother’s recipe: she grew up in Puglia and have been making them for all her life. Her orecchiette are professional! Mi capita tutte le volte che preparo le orecchiette secondo la ricetta di mia nonna: è cresciuta in Puglia e le ha fatte a mano per tutta la vita. Le sue orecchiette sono professionali!

Mine are usually too thick and of uneven shapes, but are still delicious! Le mie di solito sono troppo spesse e tutte diverse, ma sono comunque deliziose!

I shall make them more often, to improve. Le devo fare più spesso, per migliorare.

Ingredients for 4 servings / Ingredienti per 4 porzioni:

200gr fine durum wheat flour / farina di semola

100ml lukewarm water / acqua tiepida

1 pinch of salt / pizzico di sale

A round knife, for shaping the orecchiette / un coltello arrotondato, per formare le orecchiette

Mix the flour, the salt and the water until obtaining a smooth dough (yes, it’s THAT simple!). Mescolare farina, sale e acqua e impastare fino ad ottenere un composto liscio (sì, è COSÌ semplice!).

Leave to rest at room temperature, covered with a towel, for 15 minutes. Lasciar riposare a temperatura ambiente, coperto da un canovaccio, per 15 minuti.

Dust your work surface with more durum flour. Spolverate il piano di lavoro con un po’ di semolina.

Take a piece of the dough and roll it into a long sausage of about 1 cm in diameter, then cut it into small 1 cm pieces. Prendete un pezzo di impasto e rotolatelo fino ad ottenere un filone di circa 1 cm di diametro, poi tagliate tanti piccoli pezzi di circa 1 cm.

Now, don’t panic, the shaping is the difficult part, but if you don’t get it right, they will still taste great!

Ora, formare le orecchiette è la parte complicate, ma se anche non vi vengono belle, il gusto sarà comunque buonissimo!

Take one of the pieces and drag it on the surface with the help of the knife, it should curl around the knife. Prendere un pezzo di pasta e trascinarlo sulla superficie con l’aiuto del coltello, dovrebbe arrotolarsi sul coltello.

Pick up the piece and turn it inside out, pushing it on your thumb. Prendete il pezzo e rigiratelo su sé stesso, con l’aiuto del pollice.

You should obtain a shape similar to a clam shell, with thicker hedges. Dovreste ottenere una forma simile ad una conchiglia, con i bordi più spessi.

You can cook them straightaway or dry them (on a towel for a day). They last up to a month, once dried.

Potete cucinarle subito oppure seccarle (su un canovaccio per un giorno). Una volta seccate, si conservano fino ad un mese.

This weekend, I’ve served them with a quick and easy sauce: put some olive oil in a pan, add chopped garlic, chopped chilli and 2 anchovies and let the anchovies melt on a low heat. Add a handful of chopped cherry tomatoes and let simmer.

Pour the orecchiette into boiling salted water and let them cook until they come to the surface. Drain the pasta and place them in the pan with the sauce to finish cooking. Enjoy!

Questo fine settimana, le ho servite con un sugo facile e veloce: mettete olio d’oliva in una padella, aggiungete aglio e peperoncino tritati, 2 acciughe e lasciate sciogliere le acciughe lentamente. Aggiungere pomodorini tritati e lasciar sobbollire.

Versare le orecchiette in acqua bollente salata e cuocere finché non salgono in superficie. Scolare le orecchiette e versarle nel sugo per finire la cottura. Buon appetito!

Ruota di focaccia pugliese

So, I indeed am from the north of Italy, however my paternal grandmother is from Puglia and, oh boy, don’t they also know how to cook!

Dunque, io sono decisamente del nord Italia, ma mia nonna paterna viene dalla Puglia e anche loro cucinano niente male!

Whenever I was visiting her house (and my beloved grandad, Nonno Carlo), Nonna Giulia had something delicious going on, either focaccia, or panzerotti, or trocchioli with ragù di braciole pugliese (actually, Nonno Carlo made that better, although he was from Ferrara!). And yes, many of those recipes will feature on this blog.

Ogni volta che andavo a trovarla (e con lei il mio adorato Nonno Carlo), Nonna Giulia aveva qualcosa di delizioso pronto, a volte la focaccia, o i panzerotti o i trocchioli con il ragù di braciole pugliese (anche se in realtà il Nonno Carlo lo faceva meglio, pur essendo ferrarese!). E, sì, molte di quelle ricette appariranno sul blog.

Nonna Giulia is still with us, however she is now 94 and not really fit for cooking anymore. So, I got her recipe and it’s now one of my best acts.

La Nonna Giulia è ancora con noi, ma a 94 anni non cucina più. Quindi, ho carpito la sua ricetta e ora è uno dei miei pezzi forti.

The secret to this soft, plump focaccia is…(drumroll): boiled potatoes!

Il segreto di questa focaccia soffice e gonfia è… (rullo di tamburi): patate bollite!

But why wheel of focaccia? Well, go to a bakery in Puglia and this is how it’s called! Yes! You can buy a whole, round focaccia. Or you can have a piece.

Ma perché ruota di focaccia? Beh, provate ad entrare in un panificio in Puglia e si ordina così! Giuro! Si può comprare una focaccia tonda, intera. Oppure un pezzo.

Ingredients / Ingredienti:

250gr strong white flour / farina di forza bianca

250gr fine durum wheat / farina di semola

200gr of boiled potatoes, mashed / patate bollite, schiacciate

4/5 tablespoon of good extra virgin olive oil / cucchiai di olio extra vergine + extra to glaze / extra per lucidare

25gr of live yeast / lievito di birra (or 10gr of dried yeast / o lievito essiccato)

1 teaspoon of sugar / cucchiaino di zucchero

2 teaspoons of salt / cucchiaini di sale

280/300 ml of water / acqua

10-15 cherry tomatoes / pomodorini

10 pitted black olives / olive nere snocciolate

Rock salt / sale grosso

Mix the yeast with some of the water and sugar. Mescolare il lievito con parte dell’acqua e lo zucchero.

In a bowl, mix the 2 flours, the oil, the salt and the potatoes. In una ciotola, mescolare le due farine, l’olio, il sale e le patate.

Add the yeast mixture and start kneading, while adding the water gradually. You may not need all the water. Aggiungere il composto del lievito e iniziare ad a impastare, aggiungendo l’acqua poco a poco. Potrebbe non essere necessaria tutta l’acqua.

Your dough should not be too wet or sticky, but still very soft. L’impasto non deve risultare troppo umido o appiccicoso, ma comunque molto morbido.

Do not be tempted to add more flour, or you’ll end up with a heavy dough, to manipulate the dough, oil your hands instead. Non fatevi tentare dall’aggiungere farina, o finirete per ottenere un impasto pesante, per manipolare l’impasto, oliate le mani invece.

Leave to prove for a couple of hours. Lasciar lievitare per un paio di ore.

Transfer to a well oiled, round cake tin (if you want to go traditional and obtain a high focaccia) or to a rectangular baking tray. Trasferire l’impasto in uno stampo rotondo, ben oliato (se volete rispettare la tradizione e ottenere una focaccia spessa) o in una teglia rettangolare.

Prove for another 30 minutes in the tin. Lasciar lievitare per un’altra mezz’ora nella teglia.

Turn the oven on, 200 degrees C. Accendere il forno a 200 gradi.

Slice the cherry tomatoes in half and plunge them in the dough, scatter in some olives, whole, ensuring that they stick in properly. Tagliare i pomodorini a metà e distribuirli sulla superficie della focaccia, insieme alle olive, schiacciando per farli aderire alla focaccia.

Alternatively, you can top the focaccia with thin slices of sweet red onion. In alternativa, potete sostituire pomodori e olive con rondelle di cipolla rossa tagliata sottile.

Scatter some rock salt on the focaccia. Distribuire il sale grosso sulla focaccia.

Prepare a mixture of oil and water for later, and a brush. Preparare un misto di olio e acqua per dopo, e un pennello.

As soon as the focaccia starts to colour, take it out and brush some oil and water on top, this will keep it moist. Appena la focaccia si colora, spennellarle con l’olio e l’acqua in superficie, per mantenerla umida.

It should cook in 20/25 minutes, or until it colours up nicely. Si cuoce in 20/25 minuti, o finché raggiunge un colore dorato.

Amaretti morbidi

Everybody in Italy knows Amaretti and although they are – again – something very local (the hard ones from Saronno – yes, the same area where the famous Amaretto liqueur is produced, the soft ones from Sassello, a small town near Savona), they are easily available in supermarkets and are naturally gluten free.

In Italia, tutti conoscono gli Amaretti e anche se sono una ricetta locale/regionale (i classici croccanti da Saronno – dove viene anche prodotto il liquore – quelli soffici da Sassello, provincia di Savona), si trovano facilmente in tutti i supermercati e sono naturalmente senza glutine.

I am not a massive fan of the crunchy ones from Saronno (although you can use the crumbs to give great flavour to sweet and savoury recipes), but I have a soft spot for the soft, almost marzipaney, Amaretti from Sassello.

Non sono una grande estimatrice degli Amaretti di Saronno (anche se, sbriciolati, sono una grande risorsa nelle ricette dolci e salate), ma ho un debole per quelli morbidi, che ricordano il gusto del marzapane.

It’s easy to make them at home and you need few ingredients and an electric whisk. È facile farli in casa e richiedono pochi ingredienti e uno sbattitore elettrico.

Again, this is my personal version of the recipe! Questa è sempre la mia personale interpretazione della ricetta.

Ingredients for 50-60 Amaretti / Ingredienti per 50-60 biscotti:

400 gr ground almonds / farina di mandorle

250 gr of golden caster sugar / zucchero bianco

3 eggs whites, room temperature / albumi a temperatura ambiente

Start whisking the egg whites until they foam, then add the sugar, little at time. Continue whisking until you reach firm peaks.

Iniziate a sbattere gli albumi finché iniziano a schiumare e aggiungere lo zucchero poco a poco. Continuare a sbattere fino ad ottenere una neve ferma.

Fold in the ground almonds, making sure to incorporate them well, while trying not to loose too much air.

Incorporare la farina di mandorle, assicurandosi che sia amalgamata bene, ma delicatamente, per non perdere il volume.

Heat the oven at 140 degrees C. Scaldare il forno a 140 gradi.

Roll about a tablespoon of the mixture into a ball and place on an oven tray (either covered in grease proof paper or silicone sheet).

Usando come misura un cucchiaio, formare palline di impasto e posizionarle sulla placca da forno, coperta di carta antiaderente o da un foglio di silicone.

Gently press the centre of each ball. Premere delicatamente il centro di ogni pallina.

Bake for 45-50 minutes or until they become nice and golden. Infornare per 45-50 minuti o fino al raggiungimento di un colore dorato.
