Can you believe it? It’s the first anniversary for my little blog. When I started it, I wouldn’t have imagined that I was this committed. I am quite pleased with how it’s going and I look forward to share more recipes in future.
Quasi non ci posso credere, ma è un anno da che ho aperto questo piccolo blog. Non credevo che sarei stata così determinata dal proseguire questa avventura, ma sono molto contenta di come sta andando e non vedo l’ora di condividere nuove ricette in futuro.
The recipe today is from one of Paul Hollywood’s books, with some little adaptations. Everyone seems to like it and I’ve recently taken one to work for a charity event in aid of Australian’s wildlife and it was the first cake to be finished! Also it’s so typically British!
La ricetta di oggi è una rivisitazione di quella di Paul Hollywood, tratta da uno dei suoi libri, con alcune piccole modifiche. Pare piaccia abbastanza ed ad una vendita di torte al lavoro per raccogliere fondi a favore della fauna australiana è stata la prima a finire! Inoltre è una ricetta tipicamente inglese.
Ingredients: / Ingredienti:
200 gr self-raising flour (you can also use wholemeal self-raising) / farina autolievitante (potete usare anche quella integrale)
1 tsp baking powder / cucchiaino di lievito per dolci
250gr peeled and grated carrots / carote pelate e grattugiate
75gr grounded almonds / farina di mandorle
The zest of one orange / la buccia grattugiata di un’arancia
The juice of half the orange / il succo di mezza arancia
200gr light muscovado sugar / zucchero muscovado chiaro (se in Italia non esiste, potete usare muscovado normale)
1 tsp grounded cinnamon / cucchiaino di cannella in polvere
225ml vegetable oil (I suggest sunflower) / olio vegetale (consiglio di semi di girasole)
2 eggs, beaten / due uova, sbattute
A pinch of salt / un pizzico di sale
The oven needs to be well hot, so turn it on first thing at 160 degrees celsius. Il forno deve essere ben caldo, dunque accendetelo per prima cosa a 160 gradi centigradi.
In a large bowl (or in the stand mixer bowl), mix together the dry ingredients (flour, baking powder, sugar, salt, grounded almonds and cinnamon). Add then all the wet ingredients, starting with the carrots, orange zest and juice and oil. Beat the eggs well, then add them as well and combine all the ingredients together.
In una ciotola capiente (o in quella della planetaria), mescolate gli ingredienti secchi (farina, lievito, zucchero, sale, farina di mandorle e cannella). Aggiungete gli ingredienti umidi, partendo dalle carote, scorza e succo di arancia, olio. Sbattete bene le uova prima di versarle e mescolate tutti gli ingredienti insieme.
Grease the cake tin (I use a springform for this cake) very well with butter. Ungete la tortiera (io ne uso una con il fondo ammovibile) molto bene con del burro.
Pour the cake batter in the cake tin and bake for 1 hour: check that a skewer inserted in the cake comes out clean to ensure that it’s cooked.
Versate l’impasto nella tortiera e cuocete per un’ora: verificando che uno stecchino inserito nella torta ne esca pulito per assicurarsi della cottura.
I like to cut this cake in half and spread with cream cheese frosting (simply made with cream cheese, icing sugar and some vanilla paste), but it’s up to you, it’s also very tasty plain with a sprinkle of icing sugar. Traditionally the cheese frosting goes on top.
A me piace servire questa torta farcita con una crema di formaggio spalmabile (fatta con philadelphia, zucchero a velo e pasta di vaniglia), ma va a gusti, è ottima anche solo spolverata di zucchero a velo. Tradizionalmente la crema di formaggio va sopra la torta.
Ingredients for the frosting / Ingredienti per la crema:
150gr full fat cream cheese / formaggio spalmabile (non light) tipo Philadelphia)
150gr icing sugar / zucchero a velo
1 tsp vanilla paste / cucchiaino di pasta di vaniglia
The remaining half of the orange juice / Il succo della mezza arancia rimasta
Beat the cream cheese with the icing sugar, adding the vanilla paste and the orange juice to incorporate them.
Sbattete il formaggio con lo zucchero a velo, aggiungendo la pasta di vaniglia e succo di arancia per incorporarli.
Since starting this blog, one of my objectives was to make non-Italians understand how Italian cuisine is diverse from Region to Region and from City to City and so different from what is commonly known abroad. The recipe today is a perfect example of a dish that you will eat ONLY in Ferrara (my hometown), a bit like the Tenerina, and at the same time an example of the culinary history which dates back centuries: this is an original medieval recipe.
Uno dei miei obiettivi quando ho aperto questo blog era aiutare gli stranieri a capire la diversità della cucina italiana, come sia differente da regione a regione e da una città all’altra, oltre ad essere molto più varia di quella che conoscono dai ristoranti italiani all’estero. La ricetta di oggi è perfetta perché si può mangiare soltanto a Ferrara Un po’ come la Tenerina) ed è allo stesso tempo esempio della storia centenaria della cucina italiana: è una ricetta medievale.
In medieval times people seemed to love combining sweet and savoury flavours and this recipe is, to me, one of the finest examples: think of it like a pasta pie, with a sweet pastry to encase the pasta, which is enriched by a white ragù with mushrooms and truffles, béchamel (white sauce) and Parmesan. It was a dish for the wealthy, initially devised by the cook of the Estensi family, Cristoforo da Messisbugo. The version we eat today is an evolution of his original recipe.
In epoca medievale pare che la combinazione di dolce e salato fosse davvero popolare e per me questa ricetta è uno degli esempi più raffinati: è una torta di pasta, con pasta frolla a racchiudere la pasta, arricchita da un ragù bianco con funghi e tartufo, besciamella e Parmigiano. Era un piatto per i nobili, originariamente ideato dal cuoco della corte Estense: Cristoforo da Messisbugo. La versione che si mangia al giorno d’oggi è l’evoluzione della sua ricetta originale.
It is not difficult to make, but it is a bit laborious, with many different elements to prepare, let cool and assemble, so I tend to make it for special occasions, the most recent was our anniversary this week. If you don’t like the idea of using sweet pastry (bearing in mind that it won’t be as sweet as the one you would use for a tart), you can use puff pastry, but I personally prefer the original recipe. Also puff pastry makes it a bit greasier. In Ferrara you can find and buy both versions and you can prepare a big pie to slice or single portions, which look very elegant to me.
Non è un piatto difficile da preparare, ma è laborioso, con molti elementi da preparare, lasciar freddare e assemblare, dunque tendo a prepararlo per occasioni speciali, la più recente è stato il nostro anniversario questa settimana. Se non vi piace l’idea della pasta frolla (che sarà comunque meno dolce di quella per una crostata), potete usare pasta sfoglia in alternativa, ma io preferisco la ricetta originale, anche perché la pasta sfoglia rende il pasticcio troppo unto. A Ferrara potete trovare e comprare entrambe le versioni e con questa ricetta potete preparare un pasticcio grande da affettare, oppure mono porzioni, che trovo molto eleganti da servire.
This recipe is my personal version, which is adapted to my taste and the ingredients that I can easily obtain, you may find other ingredients if you search on the internet. Questa è la ricetta che uso, adattata ai miei gusti e agli ingredienti che posso trovare facilmente, potete trovare altre versioni in internet, se volete.
Ingredients for 4 portions / Ingredienti per 4 porzioni:
Sweet Pastry / Pasta frolla:
450 gr plain flour / farina bianca
180 gr cold butter, cubed / burro freddo a cubetti
100 gr caster sugar / zucchero bianco
3 eggs / uova
1/2 lemon zest / mezza buccia di limone grattugiata
A pinch of salt / un pizzico di sale
You can either make the pastry by hand or in a processor. Either way, start first by mixing the flour, sugar and salt, then add the butter and rub with the tip of your fingers (or pulse, in the processor). Once it resembles to breadcrumbs, add the eggs and the lemon zest and bring it all together until smooth. Wrap in cling film and leave in the fridge to rest.
Potete fare la pasta frolla a mano o con un robot da cucina. In entrambi i casi, iniziate mescolando farina, zucchero e sale e aggiungete il burro. Sfregate burro e farina con la punta delle dita (o usate il pulse, con il robot). Quando somiglia a pangrattato, aggiungete le uova e la scorza di limone e impastate fino a che il composto risulta liscio. Avvolgete nella pellicola e lasciate riposare in frigo.
For the ragù/ per il ragù:
150 gr minced beef / macinato di manzo
150 gr minced pork / macinato di maiale
1 glass of white wine (dry) / bicchiere di vino bianco (secco)
1 celery stalk / gambo di sedano
1 carrot, peeled / carota pelata
1/2 onion / cipolla
2 tbs olive oil / olio d’oliva
15 gr dried porcini / porcini secchi
Salt to taste
1 tbs of truffle oil or a generous grating of fresh truffle shavings / 1 cucchiaio di olio al tartufo o una generosa grattugiata di tartufo fresco
Finely chop the onion, carrot and celery, add them to a hot pan with the olive oil and let them sweat gently. In the meantime, re-hydrate the mushrooms in hot water. When the onion is translucent, add the minced meat and leave it to caramelise. Add the glass of wine and let it cook town to a gentle heat. Chop the mushrooms and add to the meat. Add salt to taste. I like to cook until the liquid is fully absorbed: if the ragù is too moist, it may affect the final result. Once the ragù is cold, add the truffle oil or truffle shavings and mix.
Tritate finemente la mezza cipolla, la carota e il sedano e aggiungeteli all’olio d’oliva in una padella calda, lasciandoli appassire dolcemente. Nel frattempo, reidratate i funghi in un po’ di acqua calda. Quando le cipolle sono trasparenti, aggiungete il macinato e fate rosolare. Aggiungete il bicchiere di vino e fatelo assorbire a fuoco dolce. Tritate i funghi e aggiungeteli alla carne. Regolate di sale. Preferisco far assorbire i liquidi completamente: un ragù troppo umido può avere un effetto negativo sul risultato finale. Quando il ragù è freddo, aggiungete l’olio al tartufo o il tartufo fresco e mescolate.
For the béchamel (white sauce) / per la besciamella:
1/2 liter of full fat milk / litro di latte intero
1 tbs plain flour / cucchiaio di farina bianca
1 tbs butter / cucchiaio di burro
1/2 tsp ground nutmeg / cucchiaino noce moscata
Salt to taste / sale a piacere
50 gr grated Parmesan / Parmigiano grattugiato
Melt the butter in a pan, add the flour and mix well. Let it cook until light brown, then start adding the milk little by little. For this recipe, I like to keep the white sauce a bit runny, not too thick. Once the consistency is right, take it off the heat, add the nutmeg and the Parmesan and mix well. Add salt to taste. Let it cool.
Sciogliete il burro in padella, aggiungete la farina e lasciate cuocere fino a che diventa leggermente brunita. Iniziate ad aggiungere il latte poco alla volta. Per questa ricetta, lascio la besciamella un po’ più liquida del solito, no troppo densa. Quando avete raggiunto la consistenza desiderata, togliete dal fuoco, aggiungete la noce moscata e il Parmigiano e mescolate bene. Regolate di sale. Lasciate raffreddare.
Pasta:
250 gr of maccheroncini rigati (if you don’t find it, you can use penne rigate
Hot boiling water in a big pasta pot, about a tablespoon of rock salt.
The trick is to cook the pasta half of the time indicated on the packet. It will finish cooking in the pasticcio in the oven. Drain the pasta and mix with the white sauce and the ragù. Leave to cool.
Cuocete la pasta per metà del tempo di cottura. Scolatela e conditela con la besciamella e il ragù, mescolando bene. Leave to cool.
Preparing the pasticcio / Prepariamo il pasticcio:
Turn the oven on at 180 degrees celsius. Accendete il forno a 180 gradi.
If you are making a big one, you can use a springform cake tin and divide the dough in two, rolling a slightly thicker round base to put at the bottom of the cake tin, add the filling forming a round-ish mound and covering with a thinner layer of pastry on top and seal carefully all around. The traditional shape is that of a Christmas pudding, roughly. If you have leftover pastry, you can decorate as you wish. Brush the top with egg yolk.
Se volete preparare un pasticcio da dividere, potete usare uno stampo da torte a cerniera. Dividete l’impasto in due e stendete la base leggermente più’ spessa e mettetela nello stampo. Versate il ripieno a formare una cupola e ricoprite con la seconda parte di pasta frolla, stesa leggermente più sottile, sigillando i bordi con cura. La forma tradizionale è a cupola e potete usare ritagli di pasta per decorare a piacere. Spennellate con un tuorlo d’uovo.
Bake in the oven until golden and shiny on top. Cuocete in forno fino a doratura.
If you want to make single portions, just create 4 thicker bases and 4 thinner and wider tops. Put the bases on an oven tray covered with grease proof paper, carefully arrange the filling on top of each base, then cover with the pastry top to form a dome and seal carefully all around. Decorate and brush with egg yolk.
Se preferite i pasticci mono porzione, stendete la pasta spessa e ritagliate 4 cerchi per la base. Ristendete la pasta rimasta leggermente più sottile e ritagliate 4 cerchi un po’ più grandi. Mettete le basi su una teglia coperta di carta da forno e versate il ripieno con cura, coprendo con i coperchi di pasta a formare una cupola e sigillate i bordi. Decorate e spennellate con tuorlo d’uovo.

Besides being always open to recipes which are suitable for many dietary requirements, I do like to experiment with different type of flours. The opportunity to try these biscuits came when my partner asked me to prepare something sweet to take to the office for his birthday, saying that there was at least one coeliac amongst his colleagues.
A parte il desiderio di trovare ricette che rispondano a diversi requisiti alimentati, mi piace sperimentare con diversi tipi di farine. L’opportunità questa volta si è presentata quando il mio compagno mi ha chiesto di preparare qualcosa di dolce da portare in ufficio per il suo compleanno, dicendo di avere almeno un collega celiaco.
My partner loves apple based recipes, so he asked me to prepare my apple and cinnamon cake, which I did, in form of muffins (much easier, if it’s already portioned!). However, I didn’t feel that confident to use gluten free flour for the cake, so I searched for some biscuits to cater for the coeliac colleagues.
Il mio compagno adora le ricette a base di mela, dunque mi ha chiesto di fare la torta di mela e cannella, cosa che ho fatto, in forma di muffin (molto più semplice da portare in ufficio, già in porzioni singole!). Tuttavia, non mi sentivo abbastanza avventurosa da usare farina senza glutine nella torta, dunque ho cercato una ricetta per fare dei biscotti per i colleghi celiaci.
I found one online, which had apples in, but I feel like it would work just fine with any other not-too-juicy fruits. Gluten free flours are mainly based on rice flour, so you can just use that, which I like as it gives the biscuits a very crumbly texture.
Ne ho trovata una in rete con le mele, ma penso che la stessa ricetta funzionerebbe con qualsiasi frutto che non sia troppo succoso. Inoltre, la farina senza glutine è principalmente composta da farina di riso, dunque potete usare solo quella, se preferite. A me piace molto la consistenza nei biscotti, dato che li rende molto friabili.
Finally, the recipe asked for gluten free baking powder: to be on the safe side and not wanting to make anyone sick (I am no expert on gluten free diet, aside from knowing to avoid cross contamination and using gluten free products!), I simply bought and used self-raising gluten free flour, however, after checking the baking powder I already had at home, it actually was gluten free. Good to know for next time!
Infine, la ricetta che ho trovato chiedeva espressamente il lievito senza glutine: per stare sul sicuro e non far stare male nessuno (non sono affatto esperta di dieta senza glutine, a parte evitare contaminazioni e usare solo prodotti senza glutine!), ho comprato ed usato farina senza glutine autolievitante, tuttavia dopo aver controllato il lievito che avevo in casa, ho letto che è senza glutine. Buono a sapersi per la prossima volta!
Ingredients for about 20 biscuits / Ingredienti per circa una ventina di biscotti:
2 eggs / uova
100gr caster sugar / zucchero semolato
100gr softened butter / burro ammorbidito
350gr self-raising gluten free flour / farina autolievitante senza glutine
(If you don’t find the self-raising flour, add 10gr of baking powder / se non trovate la farina autolievitante, aggiungete 10gr di lievito)
2 apples, cored and peeled, cut in small pieces / mele, senza torsolo e sbucciate, tagliate a pezzettini
Turn the oven on at 180 degrees celsius. Accendete il forno a 180 gradi.
Whisk the eggs and the sugar until pale, then add the soft butter: an electric whisk would work best to cream these ingredients together.
Sbattete le uova e lo zucchero fino a che non diventano chiari, aggiungete il burro: gli ingredienti si amalgamano meglio se usate uno sbattitore elettrico.
Add the flour (and the baking powder, if not self-raising) and the apples and mix all the ingredients well.
Aggiungete la farina (e il lievito, se non autolievitante) e le mele e mescolate bene per incorporare.
Form the biscuits by rolling the dough in your hands, they should be roughly the size of a walnut.
Formate i biscotti facendo delle palline grandi circa come noci.
Bake for 10-12 minutes until slightly golden: they will remain a bit pale due to the type of flour.
Cuocete per 10-12 minuti fino a che saranno leggermente dorati: resteranno comunque un po’ pallidi per via del tipo di farina.
As I said, you can try them with other types of fruit! Come detto, potete provare a farli con altri tipi di frutta!
They should keep for 3-4 days in a sealed tin. Si mantengono 3-4 giorni in una scatola di latta sigillata.

This is a recipe from Ferrara, my hometown, which to me means childhood. My aunt Anna is the best at frying and her cotolette (chicken schnitzel) are legendary, but these are my favourites! Little doughnuts made of chestnut flour and little else.
Questa ricetta viene da Ferrara, la mia città e ha il sapore della mia infanzia. Mia zia Anna è bravissima coi fritti e le sue cotolette sono leggendarie, tuttavia queste frittelle sono le mie preferite! Sono di farina di castagne e poco altro.
When I was at secondary school, my school was very close to where she lives, therefore I used to stop for lunch very often. I also loved my sleepovers at hers! So I have lots of memories of her cooking, which I have the rare privilege to enjoy now that I live in the UK!
Quando ero alle scuole medie, la mia scuola era vicinissima a casa sua, quindi mi fermavo spesso a pranzo e adoravo restare a dormire da lei! Dunque ho tanti ricordi della sua cucina, che oggi posso godere poco, dato che vivo nel Regno Unito.
This is an addition to the recipes with chestnut flour that I’ve previously published on the blog, go and search for them in the history! Accidentally, this is totally gluten free.
Questa ricetta si aggiunge a quelle con farina di castagne già pubblicate sul blog, se vi va, cercatele nella cronologia. Inoltre è completamente senza glutine.
Ingredients / Ingredienti:
10 tablespoons of chestnut flour / cucchiai di farina di castagne
1 tbs sugar / cucchiaio di zucchero
2 tbs milk / cucchiai di latte
150-200 ml water / acqua
Vegetable oil for deep frying / olio vegetale per friggere
Mix all the ingredients together but add the water little by little: your aim is to obtain a batter thick enough to fall from the spoon in a blob, with a little help.
Mescolate tutti gli ingredienti aggiungendo l’acqua poco a poco: la pastella deve essere abbastanza densa da cadere dal cucchiaio formando una pallina.
Heat the oil in a deep pan, you need enough for the doughnuts to float. Drop about a tablespoon of batter and do not overcrowd the pan, otherwise the oil will loose temperature. Fry until dark brown.
Scaldate l’olio in una padella fonda, deve essere sufficiente perché le frittelle galleggino. Fate cadere cucchiaiate di pastella nell’olio, evitando di metterne troppe, altrimenti la temperatura dell’olio si abbasserà troppo. Friggete fino a che otterrete un color marrone scuro.
Rest them on kitchen paper to drain the excess oil. Lasciatele riposare sulla carta da cucina per asciugarle dall’olio.
If you like, but it’s not traditional, sprinkle with icing sugar. Se vi piace, ma non è tradizionale, spolverizzatele di zucchero a velo.

Mango is one of my favourites fruits ever, so when I saw this cake being prepared on one of the many food tv programs I watch, I decided that I wanted to try it! And the opportunity came last week, when I was deciding what to bring to the office to celebrate my birthday.
Il mango è uno dei miei frutti preferiti in assoluto, dunque quanto ho visto questa torta preparata in uno dei numerosi programmi di cucina che seguo in tv, ho deciso di volerla provare. L’opportunità è arrivata quando stavo decidendo cosa portare in ufficio per festeggiare il mio compleanno, la scorsa settimana.
Being the first time I prepared it, I followed the recipe almost to the point, but I now am adding some improvements, as the mango cheese cream ended up being too runny for my liking.
Siccome era la prima volta che la preparavo, ho seguito la ricetta quasi totalmente, ma qui aggiungerò dei miglioramenti, dato che la crema di formaggio al mango è risultata troppo liquida per i miei gusti.
As most cheesecakes, the base is made with crumbled biscuits and butter, which has to be toasted in the oven briefly.
Come molte cheesecakes, la base è fatta con biscotti sbriciolati e burro, che va tostata in forno brevemente.
It’s not a difficult recipe, but it does have a few steps to follow, which may take some time.
Non è una ricetta difficile, ma ha alcuni passaggi da seguire, che possono richiedere un po’ di tempo.
Ingredients / Ingredienti:
For the base / per la base:
140 gr digestive biscuits / biscotti digestive o secchi
30 gr sugar / zucchero
65 gr melted butter / burro fuso
A pinch of salt / un pizzico di sale
For the mango cream cheese / per la crema di formaggio al mango:
50 gr sugar / zucchero
3 gelatine sheets / fogli di gelatina
60 ml double cream / panna liquida
70 gr cream cheese / formaggio spalmabili (tipo Philadelphia)
450 gr mango pulp / polpa di mango
Start by making the base: blitz the biscuits, add the sugar and salt to them and pour in the melted butter. Mix well to coat all the crumbs with the butter, then put the mixture in the cake tin (I recommend a quick-release spring form) and press well to create the base. Build up a small side layer too. Then put in the fridge to set for 20 minutes.
Cominciate dalla base: tritate i biscotti, aggiungete lo zucchero e il sale e versate il burro fuso. Mescolate bene in modo che tutte le briciole siano imburrate e versate nello stampo (raccomando quelli con cerniera per rimuovere la base), pressate bene i biscotti per formare la base e create un piccolo bordo ai lati. Lasciate la base in frigo per 20 minuti.
Bake the base for 10 minutes at 160 degrees celsius. Cuocete la base per 10 minuti a 160 gradi.
Now for the cream: first of all, put the gelatine sheets in a bowl with cold water for about 5 minutes.
Ora la crema: prima di tutto immergete i fogli di gelatina in una ciotola di acqua fredda per 5 minuti.
Blend the mango pulp to make a smooth purée. Frullate la polpa di mango fino ad ottenere una purea liscia.
Heat the mango purée until warm, take off the heat and add the gelatine sheets one at time, mixing well until dissolved.
Scaldate la purea di mango a fuoco medio, togliete dal fuoco e aggiungete i fogli di gelatina uno alla volta, mescolando bene fino a che sono sciolti.
Whip the cream cheese and the cream with the sugar, then add the mango puree and mix well.
Montate il formaggio spalmabile e la panna con lo zucchero, poi aggiungete la purea di mango, mescolando bene.
Pour the cream on the base, then refrigerate overnight. Versate la crema sulla base, facendola raffreddare in frigo per una notte.
Everybody liked this cheesecake, the mango cream is irresistible. If you make it looser (reducing the gelatine sheets to two), you could even use it as a filling to doughnuts or bignè.
Questa cheesecake è stata un successo e la crema di mango è irresistibile. Se la fate meno soda (riducendo i fogli di gelatina a due), potete usarla come farcia per bomboloni o bignè.
So Christmas is almost here and it’s time to share some on-topic recipes. Before doing that, I must say that I love this period of the year, but also that to me is very important to share the love not just with your near and dear, but give to those who have not as much as we do. I volunteer mainly with animals anytime I can, but I also care for humans. My company does a lot of charity and we had the homeless appeal in November and the Food Bank this month. BUT, you don’t have to wait for an opportunity to give! Yesterday we were in Oxford and I saw a homeless with his dog. It was a matter of minutes to go in a nearby supermarket and buy a couple of chubby sandwiches, some chocolate, some water and some food for the dog. He rewarded me with a smile and it takes so little! Think about it. We also took some of my boyfriend’s old jumpers and left them with a few homeless around the centre.

Ma prima, devo dire quanto amo questo periodo dell’anno, ma anche quanto secondo me è importante condividere non solo con i propri amici e cari, ma donare a chi non possiede quanto noi. Faccio volontariato quando posso, principalmente con gli animali, ma ciò non significa che io ignori gli umani. Ho la fortuna di lavorare per un’azienda che fa molta carità e abbiamo avuto la raccolta per i senza tetto a November e la banca del cibo questo mese, ma non bisogna aspettare queste occasioni per donare! Ieri eravamo ad Oxford e ho visto un senza tetto col suo cane. Ci sono voluti pochi minuti per andare in supermercato e comprare un paio di panini pasciuti, cioccolata, acqua e un po’ di cibo per il cane. Sono stata ringraziata con un sorriso e ci vuole così poco! Pensateci. Abbiamo anche portato alcuni vecchi maglioni del mio fidanzato e li abbiamo lasciati ad un po’ di senzatetto in giro per il centro.
Back to the food! I love lebkuchen, but I tend to buy them, having made them just once and a long time ago. So I thought to try that again! Also, I’d like to make a lot to give as Christmas presents, so better start early!

Ingredients / Ingredienti:
90g unsalted butter / burro 70ml clear honey / miele millefiori o di acacia 100ml black treacle / melassa 30g dark muscovado sugar / zucchero muscovado Finely grated zest 1 lemon & 1 orange / la buccia grattugiata di un’ arancia ed un limone 250g self-raising flour / farina autolievitante 1 tbsp cocoa powder / cucchiaio cacao in polvere 2 tsp ground ginger / cucchiaino zenzero in polvere 1 tsp ground cinnamon / cucchiaino cannella Pinch ground cloves / pizzico di chiodi di garofano in polvere ½ tsp ground allspice / cucchiaino di allspice in polvere ½ tsp ground nutmeg / cucchiaino noce moscata in polvere ¼ tsp bicarbonate of soda / bicarbonato Pinch fine sea salt / un pizzico di sale 60g ground almonds / farina di mandorle 1 egg / uovo
Put the butter, honey, treacle, sugar and the zest in a pan on a low heat until it all melts together. Set aside to cool.
Mettete burro, miele, melassa, zucchero e scorze in un pentolino e scaldate a fuoco basso fino a che tutto è sciolto e amalgamato. Mettete da parte a raffreddare.
In a big bowl, mix the flour with the spices, the cocoa and the grounded almonds, add the bicarbonate of soda and pour the melted ingredients. Mix well and add the egg. You will obtain a soft and pliable dough.
In una ciotola capiente, mescolate la farina, il cacao, le spezie e la farina di mandorle, aggiungete il bicarbonato e versate il composto sciolto. Mescolate bene ed incorporate l’uovo. Otterrete un impasto morbido e modellabile.
Turn the oven on at 180 degrees celsius. Accendete il forno a 180 gradi.
Flour your surface well and roll the dough to about 1/2 cm thickness. Use your cookie cutters to obtain the biscuits, mix again the cuttings and continue until you finish the dough.
Infarinate bene la superficie di lavoro e stendete l’impasto a mezzo cm di spessore. Tagliate i biscotti e re-impastate gli avanzi e continuate fino al termine dell’impasto.
Bake the biscuits for 10-12 minutes. Cuocete i biscotti per 10-12 minuti.
If you like to, you can decorate them with icing or edible glitter, to make them more festive! Se vi piace, potete glassarli o decorarli con glitter edibile per renderli più natalizi.

More chestnut flour recipes, I told you how much I love using it in my bakes and how much I love chestnuts! I really like this cake as it’s soft and delicately flavoured. The added value is that you simply mix all the ingredients together, so it’s quick to make!
Aggiungo alla carrellata di ricette con la farina di castagne, vi ho già detto quanto mi piace usarla in cucina e quanto amo le castagne! Mi piace molto questa torta, soffice e dal sapore delicato. Il valore aggiunto è che mescoli tutti gli ingredienti insieme, dunque è cosi veloce da preparare!
It’s perfect as it is, or you can slice it lengthways and add a filling of chestnut jam, to enhance the flavour. È perfetta così, oppure potete aggiungere una farcitura di marmellata di maroni, per esaltarne il sapore.
You can use any cake tin, I like to use an ornate bundt tin, as it looks very dramatic! Potete usare qualsiasi stampo da torta, io ne uso uno da ciambella decorato!
Ingredients / Ingredienti:
150 gr chestnut flour / farina di castagne
200 gr self-raising flour / farina autolievitante
120 gr sugar (either caster or cane would do) / zucchero (bianco o di canna, vanno bene entrambi)
130 gr olive oil / olio d’oliva
100 ml whole milk / latte intero
4 eggs / uova
1 tsp vanilla paste / cucchiaino pasta di vaniglia
Mix the dry ingredients, then add all the wet ingredients and mix well, to remove any lumps.
Mescolate gli ingredienti secchi, per poi aggiungere gli ingredienti liquidi. Mescolate bene per eliminare eventuali grumi.
If the mix looks too thick, I add a bit of hot water, to loosen it up.
Se l’impasto risulta troppo denso, io aggiungo un po’ di acqua calda per diluirlo.
Turn the oven on at 180 degrees celsius. Accendete il forno a 180 gradi.
Butter the tin very well, otherwise the mix will stick.
Imburrate lo stampo meticolosamente per evitare che l’impasto si attacchi.
Pour the mix in the tin and bake for 45-50 minutes or until a stick comes out clean. Do not open the oven for the first 20-25 minutes.
Versate l’impasto nella tortiera e cuocete in forno per 45-50 minuti o fino a che uno stecchino esce pulito. Non aprite il forno per i primi 20-25 minuti.

You probably remember my first soufflé from a few weeks ago. Clearly, my primordial fear of soufflés is now over and I am rather enjoying experimenting with flavours. Additionally, I find this particular recipe so quick as there is no custard base and no flour: it’s extremely light!
Vi ricorderete il mio primo soufflé di qualche settimana fa. È chiaro che ho ormai superato la paura primordiale dei soufflé e mi sto divertendo a sperimentare coi gusti. In più trovo questa ricetta fantastica, senza base di crema o farina: è leggerissima!
Raspberries are quite tart at this time of the year, therefore I recommend you to taste the purée to decide how much sugar is needed, but try not to exaggerate!
I lamponi sono particolarmente aspri in questo periodo, dunque vi raccomando di assaggiare la purea prima di decidere quanto zucchero utilizzare, ma cercate di non esagerare!
Ingredients for 2 soufflés / Ingredienti per due soufflés:
150 gr raspberries (you can use frozen, if you like) / lamponi (potete usare quelli surgelati, se volete)
60 gr caster sugar, plus 3 tbs for the ramekins and the egg whites / zucchero semolato, più 3 cucchiai per le ciotoline e gli albumi
1\2 tbs cornflour / cucchiaio di amido di mais
2 egg whites / albumi
1 tbs water / cucchiaio di acqua
5 gr butter for the ramekins / burro per le ciotoline
Icing sugar to decorate / zucchero a velo per decorare
First of all, thoroughly butter the ramekins and distribute the sugar on the bottom and the sides. Leave in the fridge to cool.
Prima di tutto, imburrate meticolosamente le ciotoline e distribuite lo zucchero sul fondo e sulle pareti. Lasciatele in frigo a raffreddare.
Put the raspberries in a small pan on a low heat and stir gently until they start falling apart. Let cook for about 5 minutes.
Mettete i lamponi in un pentolino a fuoco basso e mescolate delicatamente fino a che non si sfaldano. Lasciateli cuocere per circa 5 minuti.
Sieve the cooked raspberries, to obtain a purée. Setacciate i lamponi per ottenere una purea.
Put the purée back in the pan and add the sugar, simmer on a medium heat until the sugar is dissolved. Rimettete la purea nel pentolino e aggiungete lo zucchero, lasciate sobbollire fino a che lo zucchero è sciolto.
Mix the cornflour and water in a bowl, then add to the pan and let simmer for one more minute, whisking to prevent from sticking of forming any lumps. Cool to room temperature.
Mescolate l’amico di mais e l’acqua in una ciotola e aggiungete al pentolino. Lasciate sobbollire per un minuto, mescolando con una frusta per evitare che si attacchi o formi dei grumi. Lasciate raffreddare fino a temperatura ambiente.
In the meantime, turn the oven on at 180 degrees celsius and put a metal tray in it. Nel frattempo, scaldate il forno a 180 gradi e mettete un vassoio di metallo dentro.
Whisk the egg whites until they form stiff peaks, then incorporate 2-3 tablespoons of sugar. Continue to whisk until they hold together perfectly.
Montate gli albumi a neve ferma, poi aggiungete 2-3 cucchiai di zucchero. Continuate a montare fino a che sono compatti e lucidi.
Start adding the stiff egg whites to the raspberry purée, making sure not to knock the air out and the whites are well incorporated. Continue until all the whites are mixed to the purée.

Take the ramekins out of the fridge and fill them with the soufflé mix up to the top. Prendete le ciotoline dal frigo e riempitele fino all’orlo con il composto da soufflé.
Bake for 12 minutes and serve them immediately, dusted of icing sugar. Cuocete per 12 minuti e servite immediatamente, spolverati di zucchero a velo.
I love cooked apples and often simply bake or cook them in a pan with sugar and spices, I found them comforting and a quick fix when you want something sweet but not too indulging after dinner. I also often bake an apple and cinnamon cake, which I love, however I’ve never – until now- attempted an original apple pie. I took advantage of some friends coming for lunch last Sunday as an excuse to give it a go!
Adoro le mele cotte e spesso le cuocio al forno o in padella con zucchero e spezie. Le trovo un cibo-coccola e una veloce soluzione ad una voglia di dolce senza troppi sensi di colpa dopo cena. Ho anche una ricetta di torta di mele e cannella che adoro e preparo spesso, tuttavia non avevo mai preparato la tipica apple pie dei paesi anglosassoni. Ho trovato la scusa per farla domenica scorsa, quando abbiamo invitato amici a pranzo.
For my first attempt, I took inspiration from Paul Hollywood’s recipe from his A baker’s life book, adding however my twist to it.
Per il mio primo tentativo, ho usato la ricetta di Paul Hollywood da uno dei suoi libri (non so se vengano pubblicati in italiano), aggiungendo un tocco personale.
Ingredients / Ingredienti:
For the pastry / per la pasta frolla
275 plain flour / farina bianca
2 tbsp icing sugar / cucchiai zucchero a velo
140 gr cold butter, diced / burro freddo a cubetti
3-4 tbs cold water / cucchiai acqua fredda
For the filling / per il ripieno
3 large cooking apples / mele
4 tbs caster sugar / cucchiai di zucchero bianco
1 tsp vanilla paste / cucchiaino pasta di vaniglia
1 tsp grounded cinnamon / cucchiaino cannella in polvere
50 gr grounded almonds / farina di mandorle
For the glaze / per la glassatura
1 egg, beaten / uovo sbattuto
2 tbs caster sugar / cucchiai zucchero bianco
Start by making the pastry, which to me is easier by hand, but you can use a food processor or a stand mixer. Mix the flour and sugar, then add the cubed butter and rub it with the tip of your fingers until you obtain a breadcrumb consistency. Then add the water, little at time, until the dough comes together. Wrap it in clingfilm and put in the fridge to rest.
Cominciate dalla pasta frolla, che trovo più semplice da fare a mano, ma potete usare un robot da cucina o l’impastatrice, se preferite. Mescolate farina e zucchero, unite il burro a cubetti ed iniziate a sfregare con la punta delle dita fino ad ottenere un composto simile a pangrattato. Aggiungete l’acqua poco a poco fino a che l’impasto diventa omogeneo. Formate una palla da avvolgere in pellicola e lasciar riposare in frigo.
For the filling, peel and core the apples. Cut them in cubes. Put them in a pan with the sugar, the vanilla paste and the cinnamon and cook until tender but still firm. Set aside to cool.
Per il ripieno, pelate le mele e privatele del torsolo. Tagliatele a cubetti. Mettetele in una padella con lo zucchero, la pasta di vaniglia e la cannella e fate cuocere fino a che sono tenere ma ancora sode. Lasciatele raffreddare.
Turn the oven on at 180 degrees celsius. Accendete il forno a 180 gradi.
In the meantime, take the pastry out of the fridge, take two thirds and roll it to about 2 mm thickness to line a pie dish. Distribute the grounded almonds at the bottom, they will soak with the apples juices, helping to prevent a soggy bottom. Add the cooked apples.
Nel frattempo, riprendete la pasta frolla e usatene due terzi, stesi col mattarello a circa 2mm di spessore, per foderare la teglia da pie (di solito è di metallo smaltato, ma potete usare una teglia da torta normale). Sul fondo, versate la farina di mandorle, che aiuterà ad assorbire il succo delle mele ed evitare che il fondo della torta sia umido.
Roll the remaining pastry and use it to cover the pie. Trim the edges with a knife and crimp them nicely to seal the content. Add a decoration with the remaining pastry, if you like and don’t forget to create some slits to let the steam out. Brush with the egg wash and sprinkle generously with the sugar.
Stendete la pasta rimasta e usatela per coprire il ripieno. Tagliate i bordi e pizzicateli per sigillare il contenuto. Aggiungete una decorazione con la pasta rimasta, se vi piace e non dimenticate di praticare dei taglietti in modo da lasciar uscire il vapore. Spennellate con l’uovo sbattuto e spolverate generosamente con lo zucchero.
Bake for 30-35 minutes until golden and crisp. Leave to cool for about 10 minutes.
Cuocete per 30-35 minuti fino a doratura. Lasciate raffreddare per 10 minuti.
Serve with cream or with vanilla ice cream. Servite con la panna o con gelato alla vaniglia.
I published the recipe for Baci di dama back in April and this one differs only by the replacement of the white flour with chestnut flour. I also use melted milk chocolate, instead of dark, to put two biscuits together, as I feel it goes better with the flavour of the biscuit itself.
Ho pubblicato la ricetta dei Baci di dama in Aprile e questa è diversa solo per la sostituzione della farina bianca con quella di castagne. Inoltre, il cioccolato stavolta è al latte, che trovo complementi meglio di quello fondente il gusto dei biscotti.
What I wanted to do, is to introduce English speaking readers to chestnut flour, as it’s not of common use in your culinary traditions, as far as I know. As many ingredients used in Italy, it is quite typical of a selected area or number or regions.
Lo scopo di questo post è di introdurre la farina di castagne a coloro che non la conoscono, in quanto, come molti ingredienti usati in Italia, è tipica di una determinata area o di un numero limitato di regioni.
Chestnut flour is mainly produced in high hills/mountain areas and traditionally used there: Emilia-Romagna, Tuscany and Liguria mainly, although I discovered some recipes from Campania and Calabria.
La farina di castagne è prodotta in alta collina/montagna e tradizionalmente usata nelle regioni di origine: Emilia-Romagna, Toscana e Liguria, sebbene io abbia scoperto alcune ricette campane e calabre.
In Emilia-Romagna is used to make castagnaccio, necci, a type of crêpe (in the Apennines between my region and Tuscany) and used to make fresh pasta. In my city, Ferrara, we use it to make sweet fritters (called Tamplun), mistocchine and castagnaccio. Chestnut flour is as versatile as any flour, however it has a sweet note. I like it in bread, to make cakes and biscuits. I will share further recipes in future.
In Emilia-Romagna si usa per il castagnaccio, per i necci (in particolare sull’Appennino tosco-emiliano) e per fare la pasta fresca. Nella mia città, Ferrara, la usiamo per le frittelle (quelle di castagne si chiamano Tamplun in dialetto), le mistocchine e il castagnaccio. Tuttavia la farina di castagne può essere usata per tutte le ricette al posto di quella bianca, anche se ha un gusto dolciastro. Mi piace usarla per il pane, per le torte e i biscotti. Aggiungerò ricette in futuro.
Finally, chestnut flour is naturally gluten free! In Italy, it’s not easy to find, unless you are in one of the regions I mentioned. This is also why it can be expensive, but I saw that in the UK it can be found online.
Infine, la farina di castagne è naturalmente senza glutine! In Italia non è facile da trovare, a meno che non la cerchiate in una delle regioni di cui ho parlato. Tuttavia si può comprare su internet, anche se è piuttosto costosa.
Ingredients / Ingredienti: 150gr fine grounded almonds / farina di mandole 150gr chestnut flour / farina di castagne 150gr fridge cold butter, cubed / burro freddo di frigo, a cubetti 150gr white sugar / zucchero bianco For the filling / per il ripieno: 200gr milk chocolate/ cioccolato al latte
TIP/TRUCCO: if the dough doesn’t come together, add 1 egg yolk / se l’impasto non si amalgama, aggiungere un tuorlo d’uovo
Mix the 2 flours with the sugar and add the cubed butter and start rubbing with the tip of your fingers, this will allow the butter to mix thoroughly and the dough should come together: it will take a while. You can also use a stand mixer with the flat beater, it will be quicker.
Mescolare le due farine con lo zucchero e aggiungete i cubetti di burro: se impastate a mano, usate la punta delle dita per sbriciolare il burro e amalgamarlo agli ingredienti secchi, piano piano, l’impasto dovrebbe formarsi. Potete anche usare un’impastatrice col gancio a K.
If you see that the dough is not sticking together, add the egg yolk. Se vedete che l’impasto non si amalgama, aggiungete il tuorlo d’uovo. Roll the dough in a ball, wrap in clingfilm and leave in the freezer for 1 hour to rest.
Arrotolate l’impasto in pellicola da cucina e lasciate riposare in congelatore for 1 ora.
Prepare 2 oven trays, covered with non stick paper and turn the oven on at 140 degrees C. Preparate due placche da forno, coperte con carta da cucina e accendete il forno a 140 gradi.
Take the dough out of the freezer and start rolling little balls of about 1cm of diameter, put them on the trays, slightly apart from one another.
Prendete l’impasto dal congelatore e formate tante palline di circa 1cm di diametro, mettetele sulle placche, leggermente distanziate le une dalle altre.
Bake in the oven for 15-20 minutes, they should remain quite pale, don’t worry, they will be cooked.
Infornate per 15-20 minuti, non devono prendere troppo colore, ma saranno cotte.
On the hob, place one pan with water and bring it to the boil, turn down the heat to a simmer and place a heat proof bowl with the chocolate in to melt.
Mettete il cioccolato a sciogliere sul fornello a bagno maria.
Once the biscuits are cold, with a brush distribute some melted chocolate in the middle of one biscuit and pair with another, gently pressing to let the chocolate show. Place on a flat surface to cool.
Quando i biscotti saranno freddi, distribuire un po’ di cioccolato fuso al centro di un biscotto (io uso un pennello) e unire ad un altro biscotto, premendo leggermente cosi che il cioccolato fuoriesca leggermente ai lati. Lasciar raffreddare su una superficie piana.
I recommend to leave the chocolate to set overnight or at least for 2-3 hours.
Vi raccomando di lasciar solidificare la cioccolata durante la notte o o per almeno 2-3 ore.

In my office we gather together for cakes every Wednesday morning and I thought that tomorrow would be the perfect opportunity for this pie!
Al lavoro ci troviamo tutti i mercoledì mattina per mangiare una torta o qualche biscotto e fare due chiacchiere, dunque ho pensato che domani fosse l’occasione perfetta per questa crostata!
Ingredienti / Ingredients:
For the pastry / per la pasta frolla:
270 gr plain flour / farina bianca 00
3 tbs caster sugar / cucchiai di zucchero semolato
150 gr cold butter, cubed / burro freddo di frigo, a cubetti
2-3 tbs cold water / cucchiai di acqua fredda
For the filling / per il ripieno:
250 gr baked butternut squash, pureed / zucca cotta al forno, ridotta a purea
65 gr cane sugar / zucchero di canna
2 eggs / uova
80 ml double cream / panna liquida
half tsp ground cinnamon / mezzo cucchiaino di cannella in polvere
a pinch of ground allspice / un pizzico di allspice (pepe garofanato)
half tsp of ground ginger / mezzo cucchiaino di zenzero in polvere
a pinch of ground nutmeg / un pizzico di noce moscata
Prepare the pastry by mixing the flour and sugar together, then adding the cubed butter and rubbing it between the tips of your fingers to create something similar to breadcrumbs. Then add the cold water, one tablespoon at time, until the mixture comes together. It should not become sticky. Leave it to rest in the fridge for about one hour.
Preparate la frolla mescolando la farina e lo zucchero, per poi unire il burro a cubetti e sfregandolo tra la punta delle dita per formare un composto simile al pangrattato. Poi iniziate ad unire l’acqua fredda, un cucchiaio alla volta, finché il composto diventa compatto. Non deve essere appiccicoso. Lasciate riposare in frigo per un’oretta.
In the meantime, prepare the filling. Mix the pureed squash with the sugar, the spices, the cream and the eggs. To make it smooth, I usually also blitz it with a stick blender.
Nel frattempo, preparate il ripieno della crostata. Mescolate la purea di zucca con lo zucchero, le spezie, la panna e le uova. Per renderlo ben omogeneo, io lo passo con il frullatore ad immersione.
Line your cake tin with baking paper, then roll the pastry to cover the bottom and the sides of the tin. Then bake blind (with baking beans) for 10 minutes at 180 degrees celsius. Remove the beans and leave in the oven for another 10 minutes. Let it cool down completely.
Foderate lo stampo con carta da forno e stendete la frolla a coprire il fondo e i lati. Cuocete la pasta, utilizzando le sfere da forno in ceramica o dei fagioli secchi, per 10 minuti a 180 gradi. Togliete i pesetti e cuocete per altri 10 minuti. Togliete dal forno e lasciate raffreddare completamente.
Lower the oven temperature to 150 degrees celsius. Pour the filling in the pastry case, then bake for 50 minutes. Let it cool to room temperature and serve with a dollop of whipped cream! Delicious!
I am not good at decorating, but I’ve made an attempt with some chocolate Halloween themed subjects.
Abbassate la temperatura del forno a 150 gradi. Versate il ripieno nella frolla cotta e cuocete in forno per 50 minuti. Lasciate raffreddare fuori dal forno e servite con panna montata! Buonissima!

Halloween is not exactly an Italian celebration, given the more religiously inspired festivities which are typical of the catholic influence, however you can find ancient recipes related to All Souls’ Day, which is the 2nd of November.
Halloween non è propriamente una festività sentita in Italia, dove si seguono principalmente festività religiose a causa dell’influenza cattolica; tuttavia esistono ricette tradizionali legate al giorno dei Morti.
These little almond biscuits were traditionally left for the deaths who come back to visit their families, to sweeten their mood. The recipe is similar throughout Italy, however the shape and appearance may vary, in my region the biscuits are of different colours and flavours.
Questi biscottini alle mandorle per tradizione venivano lasciati per i morti che tornavano a visitare le loro famiglie, per addolcirne l’umore. La ricetta si trova simile in molte regioni italiane mentre la forma e l’aspetto possono variare, nella mia regione i biscotti hanno colori e gusti diversi.
The best option is to make a big batch of plain dough, then divide it in as many bowl as the flavours you wish to use. To distinguish the different flavours, add a little food colouring to each bowl.
La migliore soluzione è preparare l’impasto base, dividendolo poi in tante ciotole quanti sono i gusti che volete utilizzare. Per distinguere i diversi gusti, aggiungete un po’ di colorante alimentare a ciascuna ciotola.
For the dough (makes about 100 tiny or 50 bigger biscuits) / per l’impasto (per 100 biscottini o 50 se più grandi):
200 gr finely grounded almonds / farina di mandorle
100 gr plain flour / farina bianca
90 gr caster sugar / zucchero bianco
1 egg / uovo
25 gr softened butter / burro ammorbidito
Mix all the ingredients together to obtain a soft, pliable dough. Mescolate tutti gli ingredienti fino ad ottenere un impasto morbido e malleabile.
Divide it in 3 or 4 bowls. Dividetelo in 3 o 4 ciotole.
Now for the flavourings / Per i gusti:
1 tablespoon of cocoa powder / cucchiaio di cacao amaro in polvere
1 lemon zest, grated / la scorza grattugiata di un limone
1 tablespoon of Amaretto liqueur / cucchiaio di Amaretto di Saronno
1 teaspoon of vanilla paste / cucchiaino di pasta di vaniglia
Mix in the different flavourings with every bowl. You may need to add a little milk to the cocoa dough, as it may be too dry to work with.
I also added a bit of pink colouring with the Amaretto and some green with the vanilla.
Mescolate uno dei gusti in ciascuna ciotola. Potrebbe servire un po’ di latte per l’impasto al cacao, per evitare che si secchi troppo e diventi difficile da lavorare.
Ho anche aggiunto il colorante rosa al gusto Amaretto e un po’ di verde al gusto vaniglia.
Roll each dough into a long strip and cut the biscuits either the size of your thumbnail or double.
Formate tanti rotoli con ciascun impasto e tagliate i biscotti della dimensione dell’unghia del pollice o il doppio.
Bake in a pre-heated oven at 180 degrees celsius for about 12 minutes, then cool on a rack.
Cuocete in forno pre-riscaldato a 180 gradi per circa 12 minuti e fate raffreddare su una griglia.
These biscuits will last for at least a week in an airtight container, but don’t forget to leave some out on the 2nd November! 😉

I am a massive fan of cookery tv programs, my boyfriend would say that I hardly watch else! In recent times soufflé featured heavily in many of them and I kept telling myself that I should try and make one, with the boyfriend encouraging me as he never ate one ever.
Sono sempre stata una grande fan dei programmi di cucina, il mio moroso dice che non guardo altro! Ultimamente il soufflé sembra molto popolare in tv e continuavo a dirmi che avrei dovuto provare a farne uno, con caldo incoraggiamento da parte del moroso che non ne ha mai mangiato uno.
However, soufflé seems quite a daunting task to take on, therefore I tried to gather as many tips as possible. I have a couple of books by the famous italian chef Carlo Cracco and indeed the recipe is there, however the one for the vanilla soufflé has big quantities and I really wanted to make just two for us, to start with, so I looked at the foolproof recipe from the immortal Mary Berry!
Tuttavia approcciare la preparazione di un soufflé per la prima volta mi preoccupava un po’, perciò ho cercato di documentarmi il più possibile. Ho un paio di libri dello chef Carlo Cracco e la ricetta del soufflé è inclusa, ma le quantità sono per un dolce da condividere e in realtà volevo prepararne un paio per noi, per cominciare, così mi sono rivolta all’intramontabile Mary Berry!
Her recipe was for a lemon soufflé, but easy enough to adapt for a vanilla flavour instead. I am so pleased to say that it worked pretty well, for a first attempt!
La sua ricetta era per un soufflé al limone, ma facile da adattare per farlo alla vaniglia. Sono particolarmente orgogliosa della riuscita, per un primo tentativo!
Ingredients (2 soufflés) / Ingredienti:
10 gr soft butter, to grease the ramekins / burro ammorbidito, per ungere le ciotole
1 egg yolk / tuorlo d’uovo
2 egg whites / albumi
3 tbs caster sugar, plus extra for the ramekins / cucchiai di zucchero bianco, più extra per le ciotole
1 1/2 tspcornflour / cucchiai di amido di mais
1 tbs vanilla paste / cucchiaio di pasta di vaniglia
1 tbs flour / cucchiaio di farina
45 ml double cream / panna per dolci
55 ml full fat milk / latte intero
Icing sugar for dusting / zucchero a velo per spolverare
The secret of a successful soufflé, according to both Mary Berry and Carlo Cracco, is to make a good custard as a base.
Il segreto per la riuscita di un soufflé, secondo Mary Berry e Carlo Cracco, è preparare una buona crema di base.
First of all, butter the ramekins and use sugar to coat them well on the bottom and the sides, then leave in the fridge to set.
Prima di tutto, imburrate le ciotole e usate lo zucchero per foderare il fondo e i lati, lasciate poi riposare le ciotole in frigo.
Separate the two eggs, put one yolk in a bowl and mix it with the 3 tablespoons of sugar until light and pale. Separate le due uova, mettendo il tuorlo che vi occorrerà in una ciotola con i 3 cucchiai di zucchero: sbattetelo bene finché diventerà spumoso e pallido.
Mix the cream, flour and the cornflour in a bowl to obtain a thick paste. Mescolate l’amido di mais e la farina con la panna fino ad ottenere una pasta densa.
In a pan, warm up the milk with the vanilla paste until it reaches a gentle bubbling. In un pentolino, scaldate il latte con la pasta di vaniglia fino a raggiungere un leggero bollore.
Mix the milk to the flour an cream mixture, being careful to break all the lumps. Mescolate il latte con la pasta di farina e panna, rompendo eventuali grumi.
Put the milk back on the heat until it starts to thicken, then take it off the heat. Rimettete il latte sul fornello fino a che inizia ad addensarsi, poi toglietelo dal fuoco.
Mix in the egg yolk and sugar and put back on the hob, stirring in constantly until you obtain a nice custard. Mescolate il tuorlo con lo zucchero alla crema di latte e riportate sul fuoco, continuando a mescolare mentre si addensa in una crema.
Take the custard off the heat and let it cool down to room temperature. Togliete la crema dal fuoco e lasciate raffreddare fino a temperatura ambiente.
Preheat the oven at 180 degrees celsius and put a metal tray in: this will help the soufflés to cook at the bottom and raise well while baking. Riscaldate il forno a 180 gradi con una teglia di metallo dentro: la teglia sarà la base di cottura dei soufflés e li aiuterà a cuocere sul fondo e crescere uniformemente.
In the meantime, retrieve the two egg whites and whisk them to soft peak consistency. Nel frattempo, recuperate i due albumi che avete messo da parte e montateli a neve soffice.
Now the delicate part: start adding the egg whites to the cream, little at time, ensuring not to lose any air, whilst mixing the ingredients well, no traces of egg whites should be visible. Continue until all the whites are incorporated to the cream.
Adesso la parte difficile: cominciate ad unire gli albumi alla crema, poco a poco, prestando attenzione a non smontarli, ma allo stesso tempo mescolandoli bene, in modo che non si veda nessun bianco nella crema. Continuate fino a che tutti gli albumi sono incorporati alla crema.
Retrieve the ramekins from the fridge and fill them to the brim with the soufflé mixture, then run a finger around the inside rim of the ramekins: this should help the soufflés to raise evenly and not catch on the sides. Recuperate le ciotole dal frigorifero e riempiteli fino all’orlo con il composto da soufflé, poi passate un dito sul bordo interno delle ciotole: dovrebbe prevenire che i soufflé si attacchino al bordo mentre crescono in forno.
Place the ramekins in the oven, on the metal tray and bake for about 12-15 minutes (it may vary depending how big your ramekins are). Do not open the oven!!! And keep an eye on the colour of the top, it should get golden, but not too brown.
Posizionate le ciotole sulla teglia di metallo in forno e cuocete per circa 12-15 minuti (il tempo di cottura varia a seconda della dimensione delle ciotole). Non aprite il forno per nessun motivo!!! E tenete d’occhio i soufflé perché la superficie deve dorarsi ma non colorarsi eccessivamente.
Serve them as soon as possible, as they start to deflate as soon as they’re out of the oven, with a nice dusting of icing sugar and perhaps, as I did, with a lovely raspberries coulis. Serviteli immediatamente, perché appena fuori dal forno inizieranno a sgonfiarsi, con una bella spolverata di zucchero a velo e magari, come ho fatto io, con una salsa di lamponi.
And be proud of yourself, you’ve made your first soufflé! E siate fieri di voi stessi, avete preparato il vostro primo soufflé!

While leaving to go back to Ferrara, we stopped at a farm, where we bought some local produce and the lady offered us some of her home baked cantucci. Now, I knew cantucci pretty well, but she made them a little differently!
Sulla strada per tornare a Ferrara, ci siamo fermati ad un’azienda agricola dove abbiamo comprato alcuni prodotti locali e la padrona di casa ci ha fatto assaggiare i suoi cantucci fatti in casa. Conosco i cantucci, ma lei li preparava un po’ diversamente!
So, here’s her version of the famous biscuits! If you want to stick to tradition, just use plain flour instead!
Ecco la sua ricetta, se volete rimanere fedeli alla tradizione, usate della farina bianca!
Ingredients for about 30 biscuits / Ingredienti per circa 30 biscotti:
250gr whole meal spelt flour / farina di farro integrale
150 gr sugar / zucchero
1 egg / uovo
1/5 tsp baking soda / cucchiaino di lievito per dolci
110 gr whole almonds / mandorle intere
1 tbs honey / cucchiaio di miele
Zest of one orange / scorza di un’arancia
10ml Marsala / Marsala
A pinch of salt / un pizzico di sale
30gr softened butter / burro ammorbidito
Another egg to glaze – un altro uovo per lucidare
Warm the oven to 180 degrees celsius. Scaldate il forno a 180 gradi.
Mix all the ingredients together and form a soft dough. Tip it on a floured surface and form two long sausages, then flatten them gently with your hands.
Mescolate tutti gli ingredienti fino ad ottenere un impasto soffice. Rovesciatelo su una superficie infarinata e formate due salsicciotti lunghi, poi appiattiteli delicatamente con le mani.
Glaze the surface with the egg wash and bake in the oven for about 15-20 minutes, until the top is golden.
Spennellare con l’uovo sbattuto e cuocere in forno per 15-20 minuti fino a doratura.
Leave the oven on. Lasciate il forno acceso.
With a sharp knife, cut the dough at an angle to form the biscuits. Then bake them again for a further 10 minutes.
Usando un coltello affilato, tagliate tanti biscotti in diagonale e cuoceteli per una decina di minuti.
In Italy, Cantucci are served with Vin Santo (holy wine): you dip them in the wine to soften them and that’s it! They are yet delicious with coffee or tea 🙂
In Italia si servono ovviamente col Vin Santo, ma sono buoni anche col caffè!

I recently moved to a new department in the company I work for, to take on a more editorial role: my new department has a lovely habit of getting together every Wednesday at 11am, to share cake and a drink and have a chat. There is a rota, to which everyone can volunteer, if they wish to.
Ho cambiato dipartimento nell’azienda dove lavoro, pochi mesi fa, per un ruolo editoriale: il mio nuovo dipartimento ha un evento settimanale, ogni mercoledì alle 11, in cui ci si ritrova per un dolcino, un caffè e due chiacchiere. C’è un calendario per offrirsi volontari per il dolce, a cui si può partecipare, se si vuole.
Today, it was my turn and I love to share my bakings with my colleagues, so I tried something new. I’ve made polenta cake before, but with apples, then I found this recipe with oranges and I thought it was worth a try. Everybody loved it, or so they said! Anyway, only two little cakes were left, so it must have been true!
Oggi è stato il mio turno e adoro condividere le mie infornate coi colleghi, dunque ho provato qualcosa di nuovo. Avevo già fatto una torta di polenta in passato, ma con le mele, poi ho trovato questa con le arance e ho deciso di provarla. È piaciuta a tutti, o così hanno detto! Fatto sta che ne erano rimaste solo due, dunque sarà stato vero!
Instead of making a single cake, I’ve made mini-cakes, but the recipe is suitable for both methods. And it’s also gluten free!
Invece di una torta, ho fatto tante tortine, ma la ricetta si presta ad entrambe le preparazioni. Ed è anche senza glutine!
Ingredients / Ingredienti:
200 gr finely grounded almonds / farina di mandorle
100 gr polenta (yellow corn) flour / farina gialla da polenta
200 ml vegetable oil / olio vegetale
3 eggs / uova
4 oranges / arance
250 gr honey / miele
Turn the oven on at 180 degrees celsius. Accendete il forno a 180 gradi.
Grate the zest of the 3 oranges and put in a bowl. Grattate la buccia delle 3 arance e mettetele in una ciotola.
Squeeze the 3 oranges and filter the juice. Pour it into a pan with 100gr of the honey: heat it up and let it simmer until reduced to half and syrupy.
Spremete le 3 arance e filtrate il succo. Versatelo in un pentolino con 100gr di miele e lasciate sobbollire: deve ridursi di circa la metà e diventare uno sciroppo.
Add the remaining honey and the oil to the zest of the oranges and start to mix (I use the stand mixer or an electric beater), adding the eggs one by one. Aggiungete il miele rimasto e l’olio alla buccia delle arance e iniziate a sbattere (io uso la planetaria o uno sbattitore elettrico), aggiungendo le uova, una alla volta.
Add the grated almonds and the polenta and the juice of the last orange. Aggiungete la farina di mandorle e la polenta e il succo dell’ultima arancia.
Pour the batter into a single, well greased, cake tin, or in the holes of a muffin tray. Versate l’impasto in uno stampo ben imburrato, oppure in stampini da muffin.
Bake for 45 minutes for the single cake, or 15 minutes for the individual portions. While still hot, pour the syrup on the cake or the mini-cakes. Let cool on a rack.
Cuocete la torta per 45 minuti, o i muffin per 15 minuti. Ancora caldi, versate lo sciroppo sulla superficie e fate raffreddare su una griglia.

I remember my grandparents soaking peaches in the leftover of their glass of red wine as I am sure many Italians share this memory. I’ve never really liked the combination of peaches with red wine, so this is its posher version. It can’t be easier!
Mi ricordo i miei nonni con il fondo del loro bicchiere di vino rosso e fettine di pesca a decantare e sono sicura che tanti italiani hanno il medesimo ricordo. Però a me la combinazione pesca-vino rosso non è mai piaciuta, dunque eccovi la versione raffinata. Niente di più facile!
Ingredients/Ingredienti:
2 peaches (any variety would do) / pesche (qualsiasi varietà va bene)
5 tablespoons of Amaretto liqueur / cucchiai di liquore all’Amaretto
Cut the peaches (with their skin on, my preference, but you can peel them) in slices and then in half. Put them into a bowl with the Amaretto and let soak for 10-15 minutes. Mix well before serving.
Tagliate le pesche (con la buccia, per quanto mi riguarda, ma potete sbucciarle se preferite) a fette, da dividere poi a metà. Mettetele in una ciotola con l’Amaretto e lasciate macerare per 10-15 minuti. Mescolate bene prima di servire.
Don’t forget to drink up all the Amaretto at the bottom!
Non lasciate neanche una goccia di Amaretto nella ciotola!
How about an unusual, yet quick and easy dessert, perfect for a mid-week evening? The solution came from my good friend Sonia, who is Colombian and offered us this dessert once we were having dinner at their house. We loved it and of course I asked her how to make it and I prepare it ever since.
Cosa ne pensate di un dessert inusuale, ma facilissimo da preparare, perfetto per una sera infrasettimanale? La soluzione è gentilmente offerta dalla mia cara amica Sonia, che è colombiana e ci offri questo dessert ad una cena a casa sua. Ci è piaciuto moltissimo e ovviamente le ho chiesto la ricetta, e lo preparo regolarmente.
There is no precise measure for the ingredients, I would suggest to taste and adjust according to your preference. However, if you add too much condensed milk, it can get sickly sweet.
Non ci sono quantità precise per gli ingredienti, vi suggerisco di assaggiare e aggiustare le proporzioni secondo il vostro gusto. Se esagerate col latte condensato, però, rischiate che diventi eccessivamente dolce.
Ingredients for 4 servings / Ingredienti per 4 porzioni:
1 ripe, large avocado / 1 avocado grande e maturo
Condensed milk / latte condensato
One or two large tbsp of Amaretto di Saronno liqueur / uno o due cucchiai abbondanti di Amaretto di Saronno (can be replaced with ginger wine or other sweet but subtle liqueur / può essere sostituito da liquore allo zenzero o altro liquore dolce e delicato in sapore)
Put all the ingredients in a blender and mix to obtain a creamy consistency (will remind you of a mousse). Pour in small dessert bowl and chill until serving time.
Mettete tutti gli ingredienti in un frullatore e frullate fino ad ottenere una consistenza cremosa (vi ricorderà una mousse). Versate in ciotoline e refrigerate fino al momento di servire.

Matcha was all in trend a few years ago, however when I tried matcha tea, I didn’t like it that much. BUT, I do like it as ingredient in baking!
Il matcha era molto in auge qualche anno fa, tuttavia quando ho provato il tè non mi aveva entusiasmato. MA, mi piace molto usare il matcha in cucina.
When I started backing, there was a moment when I was almost exclusively making muffins. This recipe is still in my favourites chart! Quando ho iniziato a cucinare, ho avuto un momento in cui preparavo muffins come se non ci fosse un domani. Questa ricetta è ancora nella mia lista dei preferiti.
The result is a soft muffin, with a lovely balance of chocolate and matcha. I personally prefer it with dark chocolate, but for a more delicate flavour, the white chocolate version is perfect. The advantage is that with this recipe, your can simply replace the type of chocolate according to your taste.
Il risultato è un muffin soffice, con un ottimo equilibrio tra il cioccolato e il matcha. Io preferisco la versione col cioccolato fondente, ma per un gusto più delicato, quella col cioccolato bianco è l’ideale. Il vantaggio di questa ricetta è che potete sostituire il cioccolato con quello di vostra preferenza.
Ingredients / Ingredienti:
30 gr butter, melted / burro, sciolto
100 gr of sugar / zucchero
200 gr self-raising flour / farina autolievitante
100 gr dark chocolate or white chocolate, melted / cioccolato fondente o bianco, sciolto
60 ml milk / latte
3 eggs / uova
1 tbs matcha powder / cucchiaio di polvere di matcha
Turn the oven on at 180 degrees Celsius. Accendete il forno a 180 gradi.
Mix the flour, sugar, eggs and melted butter. Mescolate la farina, lo zucchero, le uova e il burro sciolto.
Divide the dough in two separate bowl. Dividete il composto in due ciotole separate.
Mix the chocolate in the fist bowl and add half of the milk. Mescolate il cioccolato sciolto nella prima ciotola e aggiungete metà del latte.
In the other bowl, add the matcha powder and the rest of the milk. Nell’altra ciotola, aggiungete il matcha in polvere e il latte rimanente.
Line the muffin trays with paper liners. Mettete i pirottini negli stampi da muffin.
Spoon the chocolate mixture in each of the muffin holes and add a spoon of matcha dough. Do not overfill, half of the hole is enough. Negli stampini, mettete una cucchiaiata del composto al cioccolato e una di composto al matcha. Non esagerate con le quantità, metà dello stampino è sufficiente.
Bake for 15 minutes or until a toothpick comes out clean. Cuocete per 15 minuti o finché lo stuzzicadente esce pulito.

Last week, I mentioned how my sage has overgrown and gave one solution to it: fried sage. Here’s another: apple and sage jelly. I’ve discovered it last year, as they were selling some jars from the Bridewell Organic Garden in my office for a charity event. I loved it, so I searched for a recipe to make my own.
La settimana scorsa suggerivo un metodo per risolvere il problema dell’eccessiva crescita della salvia in giardino con la ricetta della salvia fritta. Eccone un’altra, poco conosciuta in Italia, ma davvero buonissima, la gelatina di mele e salvia. L’ho scoperta l’anno scorso durante una vendita per beneficienza in favore di Bridewell Organic Gardens. Dopo averne comprato un vasetto, ho dovuto trovare la ricetta!
It’s quite a flexible recipe in terms of quantity, as much depends on how much juice you’ll obtain from the apples, but the result is so satisfying and versatile that I would really encourage you to give it a try.
La ricetta è piuttosto vaga in termini di quantità, dato che dipende da quanto succo otterrete dalle mele, ma il risultato è davvero delizioso e versatile che vi consiglio di provarla.
Ingredients / Ingredienti:
About a kilogram of apples / circa un chilogrammo di mele
A generous bunch of sage leaves / un generoso mazzo di foglie di salvia
100ml cider vinegar / aceto di mele
1 kg of jam sugar (you may not need it all) / zucchero da conserve (potrebbe non servire tutto)
Wash the apples and roughly chop them, skin, core and all. In a pot, add the vinegar and the apples and top up with water up to the level of the apples.
Lavate le mele e tagliatele grossolanamente, mantenendo la buccia e il torsolo. In una pentola, aggiungete l’aceto e le mele e versate acqua fino a coprirle.
Bring it to the boil and let simmer for about 1 hour, until the apples are soft. Portate a bollore e lasciate sobbollire per circa un’ora, finché le mele saranno morbide.
Put a muslin cloth in a strainer and strain the liquid, putting a weight on top of the mashed apples to keep draining the liquid. It may take a few hours, or you can leave it overnight. Once all the liquid has been collected, measure it: this will determine the amount of jam sugar to use.
Mettete una garza in un colapasta e filtrate il liquido, usando un peso per estrarre tutto il succo dalle mele. Ci vorranno alcune ore o potete lasciarlo a scolare durante la notte. Misurate il liquido ottenuto: vi permetterà di definire quanto zucchero da conserve utilizzare.
For every 600ml of liquid, you’ll need 400gr of sugar. Per ogni 600ml di succo, vi serviranno 400gr di zucchero
Pour the liquid back in the pot, add the sugar and the chopped sage leaves and bring to a simmer. Versate nuovamente il succo nella pentola, aggiungete lo zucchero e le foglie di salvia tritate. Portate ad ebollizione.
The jelly’s consistency is really to your taste, to me it’s ready when it’s thicker and sticks to the wooden spoon. La consistenza della gelatina dipende dal vostro gusto personale, a me piace un po’ addensata, quando si attacca al cucchiaio di legno.
Pour the jelly in sterilised jars, close well and let cool upside down. Versate la gelatina in vasetti sterilizzati, chiudeteli bene e fateli raffreddare a testa in giù.
It goes so well with cheeses (both aged and fresh), cured meats and roasts, but I also like it on bread! Buonissima con i formaggi (sia stagionati che freschi), con i salumi e con gli arrosti, ma a me piace anche sul pane!
When I was a child, my Nonna Lella used to bake my birthday cake every year: it was a very simple cake with cocoa and walnuts, nevertheless, it was my favourite. She used to decorate it with silver crisp pearls!

Reconsidering it now, it used to be a tad dry and it would have benefitted from a little more cocoa, therefore, I’ve developed my own version of it.

You can replace the walnuts for hazelnuts or pecans or mix them all together. Potete sostituire le noci con nocciole o noci pecan, oppure fare un misto.

2 eggs / uova
200 gr self-raising flour / farina autolievitante
100 gr golden caster sugar / zucchero bianco
30 gr cocoa / cacao in polvere
A pinch of salt / un pizzico di sale
50 ml olive oil / olio d’oliva
60 ml full fat milk / latte intero
1 tsp vanilla paste / pasta di vaniglia
70 gr walnuts / noci
100 ml lukewarm water / acqua tiepida
Turn the oven on at 180 degrees celsius. Accendete il forno a 180 gradi.
Whisk the eggs and sugar until fluffy and white (I use an electric whisk). Sbattere le uova e lo zucchero fino ad ottenere una consistenza spumosa (io uso uno sbattitore elettrico)
Mix the flour, cocoa, salt, vanilla paste. Mischiare farina, cacao, sale e pasta di vaniglia.
Add milk, oil and the egg and sugar mix and continue whisking. Aggiungete latte, olio e il composto di uova e zucchero e continuate a sbattere.
Now add the water and continue to whisk; the final result should look like thick hot chocolate. Aggiungete ora l’acqua e continuate a sbattere: dovete ottenere un composto che ricordi una cioccolata calda densa.
Incorporate the walnuts. Incorporate le noci.
Butter the cake tin very well and pour the cake mix. Imburrate lo stampo da torta molto bene e versateci il composto.
Bake for 30-35 minutes and check with a stick: if it comes out clean, the cake is ready. Infornate per 30-35 minuti, controllando la cottura con uno stecchino: se esce pulito, la torta è cotta.
Let it cool on a rack and serve with ice cream, or custard, or cream and a good Italian espresso. Lasciate raffreddare su una griglia e servite con gelato, o crema pasticciera o panna montata e un buon caffè.
